We are currently seeking a highly skilled Sushi Chef for one of our fine dining restaurants. This role is a pivotal part of our culinary team and involves preparing traditional Japanese sushi rice, expertly cutting, slicing, and filleting various types of fish, and crafting exquisite sushi dishes that meet our exacting standards of quality, portion size, and presentation. The Sushi Chef is expected to work closely with the kitchen team and communicate effectively with front-of-house staff to accommodate special requests and food allergy considerations. A strong emphasis is placed on maintaining food safety and health regulations, including sterilizing all utensils and kitchen equipment before use and keeping the work environment clean to prevent contamination.

As a Sushi Chef at Anthony Scotto Restaurants, you will have the opportunity to contribute creatively to the menu and help shape the culinary direction of the restaurant. You will be responsible for monitoring inventory, ordering supplies as needed, and inspecting the quality of all ingredients used in sushi preparation. Job Duties

  • Expertly cutting, slicing, and filleting different types of fish
  • Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard
  • Preparing various sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • Maintaining a clean work environment to prevent food contamination
  • Regularly taking inventory of food supplies and other products
  • Reporting any problems with kitchen equipment to the manager on duty
  • Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
  • Communicating with wait staff to ensure that special requests and food allergy considerations are satisfied
