As a Sushi Assistant Chef, you will need a deep passion for Japanese culinary arts, especially sushi preparation. This includes strong knife skills, an extensive understanding of sushi etiquette, and expertise in handling and preparing high-quality ingredients. Your responsibilities will include preparing a variety of sushi dishes such as nigiri, sashimi, maki rolls, and specialty rolls using authentic Japanese methods. Your role extends beyond cooking; you will select only the freshest seafood and vegetables, maintain rigorous hygiene and food safety standards, manage inventory efficiently to reduce waste, and collaborate closely with the culinary team to innovate and align offerings with member preferences and dietary needs.
Maintaining the aesthetic beauty of each dish is key in this role. The Sushi Assistant Chef ensures that presentation aligns with the club’s refined visual standards, enhancing the dining experience for members. You will also work closely with other kitchen staff, including sous chefs and line cooks, to coordinate timing and delivery, ensuring seamless service and a memorable meal experience.
The role requires working in a fast-paced, high-pressure kitchen environment with fluctuating temperatures and noise, necessitating a flexible schedule and varied shifts. You will also participate actively in staff meetings and take direction from the Executive Chef or Sushi Chef to contribute to the kitchen’s operational success and uphold the club’s culinary mission.

Job Requirements
- Associate's degree in culinary art
- Minimum of 3 years of relevant experience
- Proven experience as a Sushi Chef
- Ability to communicate effectively in job-related English
- Knowledge of food safety and sanitation practices
- Ability to work varied shifts and flexible schedules
- Physical capability to work in hot, humid, and noisy kitchen environments
Job Qualifications
- Associate's degree in culinary art
- Minimum of 3 years' of relevant experience
- Proven experience as a Sushi Chef
- Ability to satisfactorily communicate in job-related English
- Understanding of food and safety and sanitation practices
- In-depth knowledge of sushi preparation techniques, knife skills and sushi etiquette
- Knowledge of high-quality sushi concepts including omakase
- Well versed in sushi ingredients and Japanese fishes
- Ability to work varied shift and flexible schedule in a hot, humid, and noisy environment
Job Duties
- Prepare a wide range of dishes, including nigiri, sashimi, maki rolls, and specialty rolls, using traditional Japanese techniques and rice cookery
- Source and select the freshest and highest quality seafood, vegetables, and other ingredients necessary for sushi preparation
- Demonstrate exceptional knife skills and filleting fish as well as other ingredients
- Collaborate with the culinary team to create innovative and visually appealing sushi offerings that meet member preferences and dietary requirements
- Maintain strict hygiene and food safety standards in compliance with health regulations
- Ensure the safe handling and storage of seafood and other perishable items
- Mentor and manage inventory levels for sushi ingredients, ensuring adequate stock while minimizing waste
- Pay meticulous attention to the visual presentation of each dish, ensuring it meets the club's aesthetic standards
- Work closely with kitchen staff, including Sous Chefs and Line Cooks, to coordinate the timing of sushi orders with other menu items
- Maintain a clean and organized sushi station and workplace, including regular cleaning of utensils, cutting boards and equipment
- Attending staff meetings
- And any other tasks assigned by the Executive Chef or Sushi Chef
