The role of Sushi & Raw Bar Cook at Hemenway's encompasses a dynamic blend of culinary artistry, precision, and technical skill. This position is pivotal in ensuring that patrons enjoy an array of expertly prepared raw seafood dishes including sashimi, tartares, sushi rolls, and nigiri. The cook will be responsible for maintaining the highest standards of freshness and quality in all raw ingredients, particularly seafood, and will play a hands-on role in crafting visually appealing and delicious raw bar presentations. Beyond culinary skills, the role demands a strong sense of urgency, excellent organizational abilities, and a positive, team-oriented attitude. The successful candidate will lead a small raw bar team, fostering development and growth within the team, emphasizing collaboration and exemplary service. Job Qualifications

  • Must have flexible schedule to work during days nights weekends and some holidays as needed
  • Prior experience a plus but not required

Job Duties

  • Prepare sushi dishes including rolls sashimi tartares and nigiri following established recipes and presentation standards
  • Shuck oysters and clams
  • Ensure the quality and freshness of all raw ingredients especially seafood
  • Collaborate with kitchen staff to maintain smooth and efficient service operations
  • Maintain cleanliness organization and safety in the sushi and raw bar station and kitchen
  • Inspect and maintain sushi bar equipment reporting any issues to management
  • Follow food safety and sanitation protocols to meet the highest hygiene standards
  • Engage with guests delivering exceptional service and fostering memorable dining experiences
  • Work closely with the production team to ensure the sushi station is prepared for service
  • Produce sushi rice daily ensuring proper preparation and quality
