Job Duties
- Lead stewarding operations by maintaining exceptional cleanliness and sanitation throughout all kitchens, dishwashing areas, storage spaces, and back-of-house facilities
- ensure equipment is properly maintained
- ensure compliance and food safety by enforcing health department standards, maintaining inspection readiness, overseeing chemical and sanitation programs, and promoting a safe working environment
- manage inventory and operational assets by overseeing luxury operation supplies and equipment, including china, glassware, silvers and kitchen equipment
- control inventory, minimize breakage, conduct audits, and maintain vendor relationships
- optimize labor and sustainability initiatives by scheduling stewarding staff to support hotel occupancy and banquet operations, controlling labor costs, reducing workplace injuries, and managing waste, recycling, and oil disposal programs
- lead, train, and inspire a high-performing stewarding team to maintain and elevate operational standards
