The role being offered is a key position within the hotel’s operations, focusing on maintaining high standards of cleanliness and hygiene in the kitchen and restaurant areas. As a Dish Machine Operator at Sonesta, you will be entrusted with operating dishwashing machinery in accordance with the hotel’s established standards. Your responsibilities will ensure that all dishes, pots, pans, and other kitchen equipment are cleaned and maintained to perfection, playing an essential part in the overall guest experience and operational efficiency.

This role requires vigilance and adherence to safety protocols, including the proper use of cleaning chemicals as per OSHA standards. You will be responsible for setting up and organizing your workstation with the correct equipment, monitoring and maintaining the equipment’s working condition, and managing the water levels and temperature settings necessary to guarantee cleanliness. The position demands careful handling of soiled items to prevent breakage and losses while maintaining an organized and hygienic workspace.

Beyond technical tasks, you will build strong relationships with colleagues and contribute to a respectful and dignified work environment, supporting operations when needed outside the strict scope of dishwashing duties. Job Requirements

  • High school graduate or equivalent
  • Previous experience in hotel or restaurant dishwashing
  • Familiarity with sanitation regulations and chemical handling
  • Ability to understand and follow written and oral instructions in English
  • Ability to communicate effectively with guests and colleagues
  • Ability to perform basic arithmetic operations
  • Ability to work in a physically demanding environment including standing, walking, stooping, kneeling, crouching, and occasionally lifting up to 25 pounds
  • Willingness to wear required protective equipment such as mask, goggles, apron and boots
  • Ability to work in loud, odorous, hot, cold or damp environments
  • Flexibility to perform duties both in dishwashing and other hotel areas as needed
  • Commitment to providing excellent service to guests
  • Ability to build respectful and collaborative relationships with colleagues

Job Qualifications

  • High school graduate or equivalent
  • Previous experience in hotel or restaurant dishwashing preferred
  • Familiar with proper sanitation regulations
  • Knowledge of proper chemical handling preferred
  • Ability to speak, read and comprehend simple instructions and short correspondence in English
  • Ability to write simple correspondence
  • Ability to present information effectively in one-on-one and small group situations
  • Ability to perform basic mathematical operations including addition, subtraction, multiplication, and division with money and measurement units
  • Ability to solve practical problems and deal with various concrete variables
  • Track record of delivering exceptional guest or client experience
  • Strong communication skills for training, safety and guest interaction
  • Professional appearance and demeanor

Job Duties

  • Use correct cleaning chemicals for designated items according to OSHA standards
  • Setup and organize work station with proper equipment
  • Check the working condition of equipment to ensure it works properly
  • Fill the dish machine with proper water level and ensure the temperature level is set to standard
  • Organize the breakdown area for dirty ware
  • Remove excess food and debris from soiled ware before placing them in the machine
  • Position dirty ware in the designated racks for cleaning
  • Remove washed ware and allow them to dry and put them in designated area
  • Inspect cleanliness and condition of all washed equipment and areas and re-clean any item not meeting standards
  • Handle all dishes carefully to prevent breakage and losses
  • Change dish machine water fill and refill to ensure all dishes are properly cleaned
  • Clean spills in kitchen and work areas immediately
  • Transport garbage can from kitchen and work areas to dumpster, empty and clean according to standard
  • Report damages, maintenance problems or safety hazards to supervisor
  • Organize and restock wash areas for next shift
  • Build solid relationship with colleagues
  • Treat colleagues with respect and dignity
  • Deliver passionate and engaging service to guests
  • Consistently deliver the GUEST model
  • Other duties and responsibilities as assigned
  • Work in other areas to assist hotel operations when needed
