The Food & Beverage Manager role at Prairie Band Casino & Resort is a pivotal leadership position responsible for overseeing the Steakhouse's daily operations and contributing to the overall success of the Food & Beverage department. This role involves managing purchasing and labor costs, developing operating procedures, and ensuring compliance with financial and sanitation standards. The manager acts as a leader and role model for Steakhouse staff, ensuring that all employees are properly trained, motivated, and meeting performance expectations. The position requires strategic planning for menus and pricing, optimizing food quality and service, and fostering an environment where excellence in guest service is the standard. Additional responsibilities include conducting financial audits, investigating customer complaints, supporting special events, and maintaining a positive communication flow throughout the property. The role demands strong managerial and administrative skills, the ability to work independently and collaboratively, and readiness to work flexible hours including nights, weekends, and holidays.
Candidates joining Prairie Band Casino & Resort in this role will benefit from a $750 hiring bonus plus $50 in gas gift cards during onboarding. The resort offers a generous benefits package, including medical coverage with the casino covering over 70% of premiums, dental insurance with 79% coverage, vision insurance, 100% coverage on short-term and long-term disability, and life insurance of $15,000 for all team members. Additionally, there is a 50% employer match up to 6% on the 401(k) plan, profit-sharing bonuses paid multiple times a year contingent on financial goals, double pay on holidays, discounted gas at the resort's station, and paid time off up to 18 days in the first year. Job Qualifications

- bachelor’s degree in hotel/restaurant management or two years of supervisory experience in high volume food service with P&L responsibilities may substitute education requirement
- three years of experience in all food and beverage areas

Job Duties
- Develops standard operating procedures for the Steakhouse to maintain purchasing and labor costs within budget
- performs food and beverage analysis to ensure operational efficiency and identifies improvement areas
- monitors budget and reviews financial transactions to ensure expenditures align with budgetary goals
- completes inventory audits and financial reports to contain costs and prevent losses
- investigates food quality and service complaints, reporting findings to senior management
- plans and develops menus with pricing strategies
- institutes cost control policies and performance standards to boost profitability
- analyzes food and beverage operations including profit and loss statements to recommend alternate actions
- evaluates purchasing and market conditions to plan purchasing and menu items
- enforces sanitary practices and maintains cleanliness in food preparation and dining areas
- monitors alcohol consumption of patrons and intervenes when necessary
- trains team members to ensure excellent guest service
- administers performance appraisals and coaching for Food & Beverage personnel
- enforces uniform and appearance guidelines
- hires and develops personnel ensuring adequate labor levels
- ensures safety training and equipment maintenance
- establishes positive communication property-wide
- stays updated on marketing promotions to adjust staffing
- manages planning changes and explains variances
- promotes an exciting environment focused on service excellence
- provides management coverage as needed
- performs supervisory and service duties including cashier, server assistant, banquet, bartender, or steward roles
