The Gourmet Cook position at Graton Resort & Casino is an exciting opportunity for culinary professionals who are eager to showcase their expertise in a dynamic and upscale environment. This role is integral to the culinary operations, supporting Executive Chefs, Room Chefs, and Sous Chefs in producing high-quality dishes through a variety of cooking methods including grilling, sautéing, roasting, and cold food preparation. The Gourmet Cook is expected to utilize high-cost food inventory with precision and efficiency, ensuring that every plate served aligns with the resort's elevated standards.

In addition to technical culinary skills, the Gourmet Cook plays a vital role in exploring and integrating new culinary techniques and presentations. Job Requirements

  • High school diploma or equivalent
  • Previous cooking experience in a professional kitchen
  • Knowledge of cooking techniques and food preparation
  • Ability to handle high-cost food inventory responsibly
  • Capacity to work flexible hours including weekends and holidays
  • Physical ability to stand for long periods and perform physically demanding tasks
  • Strong attention to detail and commitment to quality
  • Understanding of health and safety regulations
  • Ability to follow recipes and maintain consistency
  • Willingness to work as part of a team

Job Qualifications

  • High school diploma or equivalent
  • Proven experience as a cook or similar role in a professional kitchen
  • Knowledge of various cooking techniques such as grilling, sautéing, roasting, and cold food preparation
  • Ability to operate kitchen equipment safely and efficiently
  • Strong understanding of food safety and sanitation standards
  • Ability to work under pressure in a fast-paced, high-volume environment
  • Excellent communication and teamwork skills
  • Culinary degree or certification is a plus
  • Experience training or mentoring apprentice cooks
  • Familiarity with international and ethnic cuisines

Job Duties

  • Redefine hospitality at Graton Resort & Casino while supporting and promoting company values
  • Exhibit knowledge and application of various cooking techniques
  • Prepare base sauces, stocks, and soups
  • Operate kitchen equipment including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, kettle, and flat top
  • Train apprentice cooks in food production and proper equipment usage
  • Maintain personal grooming and uniform standards and behave professionally
  • Ensure knowledge of emergency procedures and MSDS booklet location
  • Treat team members with dignity, fairness, and respect
  • Communicate consistently with all managers about department activities
  • Attend daily team huddles and review communication boards
  • Follow recipe book and guidelines for consistency and quality
  • Maintain cleanliness, safety, and sanitation in accordance with policies
  • Ensure kitchen equipment is in good working order and work area is hazard-free
  • Work hands-on during high-volume production including frying, sautéing, griddling, carving, broiling, steaming meats, fish, eggs, vegetables, and poultry
  • Maintain cleanliness and stock items such as cold salads, sandwiches, cold displays, desserts, sliced deli meats, and salad dressings
  • Provide exceptional guest service according to company standards
