The Steakhouse Chef position involves direct oversight of the entire kitchen operation, supporting and enforcing initiatives set by the Steakhouse General Manager and the Director of Food and Beverage. This leadership role demands exceptional culinary expertise with a comprehensive understanding of menu planning, cost control, inventory management, and sanitation practices. The chef leads and coordinates all kitchen team members to ensure efficient operations and adherence to food quality standards, which are critical to the restaurant's reputation. This role requires hands-on involvement in all kitchen activities, particularly in managing high-volume production during peak meal periods, such as two-meal service cycles common in fine dining environments. The successful candidate will demonstrate proficiency in various culinary techniques, including butchering, baking, preparation of soups and stocks, sauce creation, roasting, sautéing, broiling, grilling, and cold food production.
In addition to culinary skills, the Steakhouse Chef is expected to communicate effectively with guests, team members, and management, both in writing and verbally. The ability to exercise sound judgment and maturity in decision-making is critical, especially in challenging situations that may arise in a busy kitchen setting. Attention to detail is paramount in maintaining the restaurant’s appearance and operational standards. The chef must also be computer literate with skills in Microsoft Office and requisitioning systems to manage inventory and ordering processes smoothly. Job Qualifications
- vocational training in culinary field preferred
- minimum five years culinary experience
- at least two years as sous chef
- one year as chef de cuisine or room chef in fine dining
- current food handler manager certification or ability to acquire
- ability to obtain and maintain gaming license
