The role available is for a Specialty Tournant Chef at the Luxor, one of MGM Resorts' renowned properties. The Specialty Tournant Chef plays a key role in managing daily kitchen operations while driving culinary innovation and operational excellence. This position involves overseeing fiscal budgets, labor productivity, inventory control, and maintaining exceptional guest service standards. The ideal candidate will support the Executive Chef in menu creation and tactical execution of business plans to meet short-term profitability goals while ensuring compliance with health, safety, and sanitation standards.

Job Requirements

  • Bachelor's degree or equivalent experience
  • 2+ years of prior relevant experience as a chef
  • Previous experience managing employees under a collective bargaining agreement preferred
  • Previous experience working in high-volume restaurant or luxury or fine-dining restaurant preferred

Job Qualifications

  • Bachelor's degree or equivalent experience
  • Minimum 2 years experience as a chef in a similar environment
  • Experience in managing kitchen operations and culinary teams
  • Strong leadership and communication skills
  • Ability to work effectively under pressure in a fast-paced environment
  • Knowledge of health, safety, and sanitation regulations
  • Experience in budgeting and inventory control
  • Ability to train and develop team members
  • Proven guest service orientation
  • Familiarity with collective bargaining agreements is preferred

Job Duties

  • Lead and oversee daily restaurant kitchen operations including fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and menu strategy execution
  • Execute restaurant business plan and assist Executive Chef in achieving goals and targets
  • Implement policies, procedures, training programs, menus, rules, and regulations for kitchen staff
  • Ensure restaurant compliance with food and beverage initiatives and company-wide programs
  • Maintain highest standards of health, sanitation, and cleanliness within the kitchen
  • Complete all company compliance training by restaurant staff
  • Manage human resources duties including creating a work environment that promotes teamwork, performance feedback, recognition, mutual respect and employee satisfaction
  • Hire, train, and plan succession reflecting diversity commitment and compliance with policies, legal requirements, employment law, and collective bargaining agreements
  • Interact with guests to ensure satisfaction and resolve complaints
  • Work with service team to ensure seamless kitchen and dining room service
  • Maintain excellent knowledge of food and beverage products, menu items, and kitchen equipment used
