The Specialty Cook position at HMSHost is a vital role within the company’s extensive network of branded foodservice concepts. This non-exempt position reports directly to management staff such as Store Managers, Assistant Store Managers, or Operations Directors. The Specialty Cook is primarily responsible for preparing wok-cooked or sautéed menu items to exact recipe standards, ensuring food quality, safety, and presentation meet the high expectations set by HMSHost. This role requires working efficiently to meet time goals and coordinating with other kitchen staff to synchronize food output and maintain a clean, sanitary work environment.

Beyond preparation duties, the Specialty Cook supports the overall kitchen operation by performing essential tasks such as inventory management, adherence to HACCP food safety standards, and assisting in training and development activities related to new menu items and cooking techniques. A successful Specialty Cook will possess strong culinary skills, particularly in wok-cooking or sautéing, and must be comfortable working in a fast-paced, high-volume kitchen environment. Physical stamina is important, as the role involves standing and walking for extended periods, handling kitchen equipment safely, and periodically lifting up to 50 pounds of supplies. Job Requirements

  • High school diploma or equivalent
  • 1-2 years wok cooking or related culinary experience
  • completion of brand training program
  • knowledge of food safety standards including HACCP
  • ability to work in fast-paced environment
  • physical ability to stand and walk up to nine hours
  • capability to handle knives safely
  • excellent communication skills
  • ability to lift and carry up to 50 lbs
  • flexibility to work varied shifts and weekends

Job Qualifications

  • Requires 1-2 years of wok-cooking experience where food is prepared to order including ability to work two woks simultaneously preferred
  • if no previous wok experience, requires a minimum of 1-2 years of sauté experience or cooking experience in a high volume and high prep dining kitchen
  • successful completion of brand training program
  • food preparation skills and knowledge of HACCP standards
  • ability to speak, read and comprehend instructions, short correspondence and policy documents
  • ability to converse comfortably and professionally with individuals
  • ability to work in varied kitchen temperatures including very warm cooking environments
  • ability to cook, stand and walk for periods up to nine hours
  • ability to handle knife and cleaver
  • exceptional skills in handling all product and specialty ingredients and quality control
  • ability to adapt to changes in new menu items and cooking techniques
  • ability to read and understand associated recipes, prep lists and pars
  • capacity to perform basic math and measurement calculations associated with recipes
  • ability to reach, bend, balance and transport objects weighing up to 30 lbs repeatedly throughout the shift, with occasional weights up to 50 lbs

Job Duties

  • Follows recipes and product directions for preparing and wok-cooking all specified menu items
  • works with a sense of urgency to meet time goals while adhering to recipe standards
  • displays attention to detail and food presentation
  • follows recipes and product directions for preparing, cutting, marinating, cooking, tasting, carving and serving all items
  • tastes products, follows menus, estimates food requirements, checks production and keeps records to accurately plan production requirements and requisition supplies and equipment as needed
  • performs basic math and measurement calculations associated with recipes
  • operates kitchen equipment including buffalo chopper, fryers and cleavers
  • handles knives safely and wears cut gloves
  • coordinates food output with other cooks
  • maintains quality control for all products including monitoring freshness
  • cleans and sanitizes workstations and equipment
  • follows excellent food safety and sanitation practices and complies with HACCP standards
  • stocks, dates, rotates and checks temperature of product
  • receives, moves and lifts food and beverage products and supplies
  • complies with HMSHost and franchise policies as well as those of all applicable regulatory agencies
