The position available is for a Food Production Lead at the South Clubhouse, a pivotal role responsible for overseeing the production of all a la carte food offerings. This role demands meticulous management of food costs and daily production activities while ensuring strict adherence to standard operating procedures for both hot and cold food lines. It requires a strong leader who can effectively manage kitchen operations, maintain quality standards, ensure food safety, and foster teamwork among the culinary staff.
The Food Production Lead at Ridglea Country Club will be accountable for managing the overall food preparation processes, including using recipes accurately, minimizing waste, and maintaining proper portions. This role requires constant communication with the South Course Food & Beverage Manager to coordinate special menu items and adjust production to meet demand efficiently. The candidate will also be responsible for maintaining organization, sanitation, and hygiene standards throughout the kitchen workspace. They must handle labeling, dating, and proper storage of food items following FIFO (First In, First Out) inventory systems, as well as manage walk-in cooler conditions to uphold food safety regulations.
This employment opportunity is flexible and may require working weekends, holidays, and overtime as necessary to support the club’s operational requirements. Job Duties
- Possess technical skills needed to fulfill required job duties

- understand and use recipes accurately for all food production
- produce correct amount of product minimizing waste
- prepare all foods to proper doneness and seasoning
- assist with preparation of other food products on serving line as needed
- properly assemble and organize tools and utensils
- prioritize work to meet immediate needs
- work collaboratively as part of a team
- return soiled utensils and small-ware items to proper areas
- follow sanitation practices strictly
- cool and store all foods properly
- maintain clean and neat station during and after shift
- maintain personal hygiene and professional dress
- manage food production for consistent high quality
- maintain professional standards of conduct and appearance
- establish and adhere to food and labor cost goals
- attend monthly kitchen meetings
- communicate daily with South Course Food & Beverage Manager
- perform assigned tasks accurately and timely
- perform additional duties as assigned by South Club Manager

- accommodate reasonable special requests from members
- manage dating, labeling and covering of items in walk-in coolers and freezers
- maintain safety and security in workstation
- ensure walk-in coolers are properly maintained using FIFO
- keep walk-in coolers free of debris and hazards
- taste all food produced for ala carte
