Currently, Hard Rock Hotel San Diego offers a full-time, on-site position for a Temporary Sous Chef at MaryJane's Diner, a flagship dining outlet within the hotel. This role is specially designed to coincide with the world-famous Comic-Con event in July, where downtown San Diego transforms into an entertainment nexus. MaryJane’s Diner is at the center of this transformative week, serving early breakfasts, lunches, dinners, and late-night meals to a bustling crowd. The Temporary Sous Chef will play a pivotal leadership role in managing high-volume service, ensuring the highest standards of food quality, consistency, and presentation are maintained amid the fast-paced kitchen environment.
This position calls for a hands-on culinary leader who thrives during busy service periods and enjoys leading, supporting, and motivating a kitchen team. Job Requirements
- 2+ years culinary leadership experience in a high-volume restaurant, hotel, or upscale dining environment
- Ability to lead and motivate kitchen teams
- Experience working in fast-paced kitchen environments
- Knowledge of food safety and sanitation regulations
- Strong organizational skills and attention to detail
- Availability to work extended hours, evenings, weekends, holidays, and during Comic-Con week
Job Qualifications
- 2+ years of culinary leadership experience in a high-volume restaurant, hotel, or upscale dining environment
- Lead by example and enjoy mentoring and motivating kitchen teams
- Thrive in fast-paced, high-energy kitchens where every second counts
- Take pride in consistency, organization, and attention to detail
- Have strong knowledge of food safety, sanitation, and kitchen operations
- Are flexible and available to work extended hours, evenings, weekends, holidays, and throughout Comic-Con week
Job Duties
- Lead and support daily kitchen operations during high-volume breakfast, lunch, dinner, and late-night service
- Work alongside the Executive Chef to execute menu items with consistency, speed, and exceptional presentation
- Supervise and support line cooks, prep cooks, and stewards while fostering a positive, team-first environment
- Ensure all food is prepared according to recipes, quality standards, and presentation guidelines
- Maintain food safety, sanitation, and cleanliness standards in accordance with local health regulations
- Monitor product quality, inventory levels, and proper food storage throughout each shift
- Assist with ordering, inventory management, and minimizing food waste whenever possible
- Collaborate with Front of House leadership to ensure seamless communication and guest satisfaction
- Jump in wherever needed to support the team and keep service running smoothly during Comic-Con's busiest days
