The Executive Sous Chef position at Legends is a pivotal role centered on supporting the culinary operations under the guidance of the Executive Sous Chef. This role bears responsibility for overseeing all aspects of food production, operational effectiveness, and sanitation within both culinary and stewarding departments. The individual in this position will directly influence the quality of food service at major events, ensuring adherence to Banquet Event Orders and maintaining exceptional standards of cleanliness and safety in compliance with health regulations.
In addition to managing daily kitchen activities, this role extends to training kitchen and stewarding staff, including ensuring all members comply with Serve-Safe certification requirements and local health department regulations. The Executive Sous Chef must maintain a Health Department score of 90 or higher, demonstrating a strong commitment to food safety and operational hygiene.
Financial oversight plays a significant part in this role as well; the individual must manage food costs effectively to meet budget goals and assist with inventory control and monthly stock assessments. The responsibility also includes attending in-house meetings related to event coordination and communicating any immediate changes across relevant departments. Equipment maintenance and cleanliness are critical tasks, requiring the Executive Sous Chef to supervise annual maintenance schedules for kitchen tools and appliances.
The position demands a seasoned culinary professional with a minimum of four years experience in banquet settings, known for producing meals at large-scale events. Job Requirements
- At least four years of culinary experience in a banquet facility producing meals for large events
- Serve-Safe certified
- Must adhere to local Health Department codes
- Ability to undertake and complete multiple tasks
- Computer skills to include Excel programs
- Advanced oral and written communication skills
- Strong orientation to customer service and ability to work with other staff members in the facility
