The role being offered is a supervisory kitchen position at the Shoals Marine Laboratory, operating under the Head Chef's supervision. This position is pivotal in managing the kitchen operations on Appledore Island, where daily meal preparation caters to over 100 residents and visitors. The successful candidate will oversee a small core team of kitchen staff, student workers, and volunteers. The kitchen emphasizes preparing hearty, healthy meals made from scratch, focusing on utilizing locally sourced ingredients when possible to promote sustainability and support local producers.
Responsibilities include meal planning, food procurement, maintaining kitchen cleanliness and safety, and ensuring a welcoming environment for all. This role requires stepping into the Head Chef's responsibilities during their absence, while emphasizing food waste reduction and sustainable culinary practices. Job Requirements
- Experience managing dining services teams in successful execution of regular meal service for large groups
- Ensure a culture of cooking from scratch when possible and in a healthy manner
- Experience addressing allergy, food preferences and food intolerances in a discrete and safe manner
- Knowledge of basic computer skills
- Proven organization skills

- ServeSafe Manager Certificate or willingness to obtain in first two weeks of employment
- Serve as crew member on commercial or oceanographic vessels
- Valid drivers license and safe driving record
- Willingness to live and work in a remote island environment during the seasonal period
- Ability to contribute beyond job duties including helping with general community tasks
- Ability to pass criminal background check and periodic child safety training as required by NH State Law

Job Duties
- Supervise all employees working in the SML kitchen including core team, student workers, and volunteers
- Assist and sometimes lead the planning and preparation of 20+ meals per week from scratch using local producers when feasible
- Participate in regular and special event meal planning, food preparation, food transportation, kitchen cleaning, dishwashing, and food storage
- Maintain a clean and safe operating environment in the SML kitchen at all times
- Take full responsibility for SML kitchen operations when Head Chef is off island
- Manage food procurement under supervision of the Head Chef
- Focus on sustainability and food waste reduction
- Provide exemplary customer service
- Foster a safe, inclusive, and welcoming environment
- Implement diversity, equity, and inclusion initiatives
- Be available for consultation and emergency response while on duty and on SML property and vessels
- Serve as a crew member on commercial vessels and operate small boats
