The Sous Chef role at MorningStar Senior Living involves more than just culinary expertise; it is a vital position that directly contributes to the holistic wellbeing of senior residents by providing nutritious, balanced, and visually appealing meals. This full-time position, with a competitive pay rate of $28.50 per hour and a scheduled workweek from Thursday to Monday between 11:30 am and 8 pm, reports to the Executive Chef. The Sous Chef is responsible for the preparation, cooking, seasoning, and presentation of a wide variety of dishes including meats, fish, poultry, vegetables, fruits, soups, salads, desserts, breads, and pastries in accordance with established menus.
Leadership and food safety are critical components of this role. The successful candidate must possess the ability to lead a kitchen team, ensure compliance with all federal and state regulations, and adhere to company policies. This includes understanding proper food handling techniques, preventing foodborne illnesses, and maintaining high standards for food quality and safety. The Sous Chef also plays an integral part in managing food quantities to minimize waste, while consistently delivering meals that satisfy both nutritional requirements and individual resident preferences.
Additionally, the Sous Chef will exercise judgment and creativity by following standard recipes while having the autonomy to make decisions based on experience. This position requires a keen awareness of the cooking characteristics of different types of meats and other ingredients, as well as skills in preparing food that is both palatable and appetizing. The Sous Chef will also assist in preparing cold foods, beverages, and various specialty dishes, ensuring that every meal served supports the residents’ dietary guidelines.

Job Requirements
- High school diploma preferred but minimum ability to read and write English
- previous experience in dietary department of health care facility preferred
- ability to prepare and cook a variety of foods in large quantities
- awareness of special diets, seasoning requirements, cooking times, temperature controls
- ability to estimate quantities of food required, limit waste and utilize leftovers while serving attractive, appetizing meals

Job Duties
- Handle and prepare food that is palatable, appetizing, and attractive
- comply with meal schedules
- follow standard recipes but make independent decisions in line with current experience
- understand importance of proper food-handling techniques and hazards of improper food handling
- be familiar with seasoning and cooking time required
- be aware of cooking characteristics of various cuts of meats, fish and fowl
- estimate quantities of food required and apportion servings while monitoring portion controlled guidelines for individual residents
- prepare foodstuffs for cooking: peel, wash, trim, and cut vegetables and fruit
- wash, cut, de-bone and trim meat, fish and fowl
- taste, smell, and observe food to ensure conformity with recipes and appearance
- serve food according to dietary guidelines, checking each tray for completeness and accuracy
- cook food: bake, roast, stew and steam-cook meats, fish and fowl, basting as necessary to retain flavor
- make gravies, stocks, dressings, sauces and soups
- prepare cold meats, sandwiches, griddle cakes, cooked cereals, and beverages
