The role of the Sous Chef at MorningStar Senior Living is a vital part of the community’s commitment to offering nutritious and flavorful meals tailored to the specific dietary needs of senior residents. This full-time position offers a salary of $55,000 per year and is classified as non-exempt, ensuring compliance with fair labor standards. The schedule is flexible and discussed during the interview process, with a requirement for weekend availability. The Sous Chef works closely with the Executive Chef and other kitchen staff to prepare, cook, and present a wide variety of meals that are both appetizing and balanced. This role is not only about culinary skills but also requires leadership abilities, attention to detail, and adherence to federal and state health regulations.
In this role, the Sous Chef is responsible for a broad range of kitchen duties including the preparation of meat, fish, poultry, vegetables, fruits, soups, salads, desserts, breads, and pastries. The individual must be skilled in seasoning, cooking times, and proper food handling techniques. They ensure that all meals align with the prescribed menus and dietary guidelines while maintaining high standards of food safety and sanitation. Moreover, the Sous Chef estimates food quantities, manages portion control, and minimizes waste effectively. The position demands a thorough understanding of various cooking methods such as baking, roasting, stewing, and steaming that preserve the flavor and presentation of each dish.
The Sous Chef is also expected to engage with the community’s culture by demonstrating core values such as love, kindness, honesty, goodness, fairness, and respect. Job Requirements
- High school diploma or equivalent
- previous experience in dietary or culinary role preferred
- ability to read and write English
- availability to work weekends
- knowledge of food safety and handling regulations
- capable of following recipes and cooking procedures
- good physical stamina for kitchen work
- excellent hygiene and sanitation practices
Job Qualifications
- Demonstration of core values: love, kindness, honesty, goodness, fairness, respect
- high school diploma preferred, but at minimum the ability to read and write English
- previous experience in the dietary department of health care facility preferred
- ability to prepare and cook a variety of foods in large quantities
- awareness of special diets, seasoning requirements, cooking times, temperature controls
- ability to estimate quantities of food required, limit waste, and utilize leftovers
- strong teamwork and communication skills
Job Duties
- Handle and prepare food that is palatable, appetizing, and attractive
- comply with meal schedules
- follow standard recipes but make independent decisions in line with current experience
- understand importance of proper food-handling techniques and hazards of improper food handling
- be familiar with seasoning and cooking time required
- be aware of cooking characteristics of various cuts of meats, fish and fowl
- estimate quantities of food required and apportion servings while monitoring portion controlled guidelines for individual residents
- prepare foodstuffs for cooking: peel, wash, trim, and cut vegetables and fruit
- wash, cut, de-bone and trim meat, fish and fowl
- taste, smell, and observe food to ensure conformity with recipes and appearance
- serve food according to dietary guidelines, checking each tray for completeness and accuracy
- cook food: bake, roast, stew and steam-cook meats, fish and fowl, basting as necessary to retain flavor
- make gravies, stocks, dressings, sauces and soups
- prepare cold meats, sandwiches, griddle cakes, cooked cereals, and beverages
