The role of the Sous Chef at Universal Studios Hollywood is a pivotal culinary leadership position responsible for maintaining the highest quality food and service standards within a designated area of the park. This role is vital to the culinary operations of the theme park, where the Sous Chef supervises and develops teams to execute efficient food production and exceptional guest experiences. The position demands a hands-on approach to overseeing daily kitchen operations, including conducting facility inspections, maintaining strict sanitation standards, collaborating closely with maintenance teams to ensure equipment functionality, and managing inventory and production control processes. The Sous Chef also plays a creative role by assisting in the development of innovative menus and ensuring recipes and production standards are meticulously documented, updated, and communicated across teams. This role supports the broader culinary teams within both theme park and catering environments, ensuring a seamless integration of culinary services that align with the brand’s commitment to excellence.

Aside from operational responsibilities, the Sous Chef is expected to foster strong collaborative relationships across departments, provide insightful operational analysis to culinary and management teams, and champion sustainable practices such as food waste management and repurposing of excess food. Training and development of culinary staff are also integral to this position, partnering with Human Resources to create effective training sessions and onboarding experiences for new hires. In addition, the Sous Chef interacts directly with guests to enhance their dining experiences, embodying the values of NBCUniversal’s guest-first approach. This full-time position offers a competitive salary range of $68,640 to $75,000 and includes company-sponsored benefits such as medical, dental, vision insurance, 401(k), paid leave, tuition reimbursement, and various employee discounts and perks. Job Requirements

  • Proven knowledge of Word and Excel
  • Minimum 3 years of culinary experience, which includes working in a high volume fast pace restaurant or similar high production environment
  • Proven ability to work within a fast paced, guest oriented and highly collaborative environment
  • ServSafe Certification

Job Duties

  • Proper and consistent production of all food products at all times
  • Conduct daily inspections of the facility and complete the daily walk through reports for all areas
  • Maintain all kitchens in a sanitary condition at all times
  • Work in conjunction with facilities to insure proper maintenance of all equipment
  • Accurately complete and maintain the daily production log and weekly production plan
  • In partnership with the Food Warehouse and the Fresh Product Receiving Clerk, inspect all received product
  • Create and maintain production recipes and specification book and photos
