The role of the Sous Chef at Universal Studios Hollywood is a pivotal position within the culinary team responsible for ensuring the delivery of high-quality food and exceptional service across designated culinary operations. This role is designed for a culinary professional who can maintain the highest food production standards, supervise kitchen operations, and continually develop team members to foster growth and excellence. The Sous Chef will work closely with various departments, including food warehousing, facilities management, and technology teams, to sustain smooth operational workflows and achieve cost efficiency in food service delivery.

Key responsibilities include managing daily production, conducting thorough inspections to uphold sanitation standards, maintaining accurate production and inventory logs, and collaborating with relevant teams to ensure food safety and quality. Additionally, the Sous Chef plays an instrumental role in menu innovation, waste management, and training culinary staff to meet company standards while enhancing the guest experience. Job Requirements

  • Minimum 3 years culinary experience including high volume fast paced restaurant or similar environment
  • ServSafe Certification

Job Duties

  • Proper and consistent production of all food products at all times
  • conduct daily inspections of the facility and complete the daily walk through reports for all areas
  • maintain all kitchens in a sanitary condition at all times
  • work in conjunction with facilities to insure proper maintenance of all equipment
  • accurately complete and maintain the daily production log and weekly production plan
  • inspect all received product in partnership with the Food Warehouse and Fresh Product Receiving Clerk
  • create and maintain production recipes and specification book and photos
  • ensure all charges into and out of the restaurants are current and correct
  • communicate with information technology group to ensure all recipes are updated and accurate
  • partner with the EATEC Team to ensure all inventories are correct
  • support the culinary team within the Theme Park and Catering as assigned
  • assist in creation of innovative menus for new products as needed
  • practice effective organizational skills at all times
  • work within all health and sanitation guidelines
  • assist in development of all food staff
  • establish and maintain effective control of cost of goods and waste
  • uphold exceptional standards and practices at all times
  • foster and maintain strong working relationships across all functions within the park
  • provide operational analysis understanding to culinary and operational teams
  • ensure success of the food service waste management program
  • utilize all excess food items and ensure it is transferred or repurposed
  • organize and execute skills training sessions for culinary team
  • partner with Human Resources for developing and/or improving training including new hire training
  • understand the role culinary plays in supporting internal customers to provide excellent products and services to paying guests
  • interact with guests to positively impact their experiences while visiting the Theme Park
  • perform other duties as assigned
