The role available is under the guidance of the Executive Chef and Executive Sous Chef, specifically designed for individuals passionate about culinary excellence within a high-volume, fast-paced environment. This position involves taking direct responsibility for supporting all culinary operations throughout the facility, overseeing production, operational efficiency, and sanitation standards related to culinary and stewarding activities. The successful candidate will exercise hands-on leadership managing day-to-day operations across different kitchen outlets, ensuring that every ingredient and menu preparation meets the highest quality and safety standards.
This role requires a profound level of culinary management expertise, experience with multi-outlet kitchen leadership, and a keen eye for detail in sourcing and utilizing only the freshest produce, meats, and seafood. Compliance with Health Department regulations is paramount, encompassing proper receiving, storage, rotation, and sanitation protocols to guarantee food safety and product freshness are maintained at all times. Furthermore, this position holds the key responsibility of maintaining exceptional customer and client relations through effective communication and prudent financial management to ensure service efficiency and product quality.
The successful candidate will also be intricately involved in banquet coordination under the Executive Chef’s direction and will carry out supervisory duties aligned with company policies and legal standards. Supervisory tasks include recruitment, training, workforce management, performance appraisal, conflict resolution, and employee motivation within the culinary teams.

Located onsite at the University of California, Southern California's LA Memorial Coliseum, the role demands flexibility, including working extended hours, nights, weekends, and holidays, with the possibility of travel for business needs. Job Requirements
- Degree or certification in culinary arts or related apprenticeship
- Minimum three years experience in high-volume food service operations
- Proven leadership in kitchen management
- Knowledge of health department regulations and kitchen sanitation
- Skilled in financial analysis and team communication
- Proficiency with Microsoft Office suite
- Ability to work flexible extended hours
- Capability to travel for business purposes
- Ability to provide short-term support to other locations during business emergencies
Job Qualifications
- Degree or certification from an accredited culinary arts institute or American Culinary Federation apprenticeship certification
- Minimum three years experience in a high-volume full-service food operation
- Proven track record improving kitchen efficiency, quality, and controlling costs
- Excellent leadership and team-building skills
- Strong financial analysis and customer service communication skills
- Knowledgeable in kitchen sanitation and equipment operation
- Proficient in Microsoft Word, Excel, and PowerPoint

Job Duties
- Lead day-to-day operations of assigned food outlet kitchens
- Manage multiple kitchen outlets with expertise
- Inspect, select, and use fresh fruits, vegetables, meats, fish, and other high-quality food products for menu preparation
- Monitor proper receiving, storage, and rotation of food products to comply with Health Department regulations
- Participate in the production of all required food items under chef's direction
- Lead culinary staff in maintaining kitchen sanitation and comply with health and company standards
- Support banquets under Executive Chef and Sous Chef direction
