The Sous Chef role at Campo Pizza is a dynamic hands-on leadership position designed for an experienced cook who seeks not just a station to work on, but ownership within a fast-paced and evolving kitchen environment. The Sous Chef plays a critical role in the daily operations of the kitchen, overseeing prep work, line execution, staff training, organization, quality control, inventory management, and clear communication with team members and front-of-house staff. This role works closely with the Culinary Director to maintain high standards, develop specials, explore seasonal ideas, and organize events that enhance the restaurant's offerings and reputation.

As a leader, the Sous Chef is expected to set the pace during service, uphold kitchen standards, and create an atmosphere where the team is focused, motivated, and rewarded for their hard work. Job Requirements

  • High school diploma or equivalent
  • 3-5 years of professional kitchen experience
  • At least 2 years in a kitchen leadership role
  • Strong interest in pizza, fermentation, and Italian cooking
  • Experience in fast-paced, high-volume kitchens
  • Strong communication skills
  • Ability to work under pressure
  • Knowledge of food safety and sanitation practices

Job Qualifications

  • 3-5 years of professional kitchen experience

  • Strong interest in pizza, fermentation, Italian food, or Italian-adjacent cooking
  • Experience leading cooks in a fast-paced, high-volume environment

Job Duties

  • Lead prep, line setup, service execution, and shift flow
  • Train cooks on recipes, systems, station standards, and service expectations
  • Help execute and refine the Roman-style pizza program including dough, sauces, toppings, builds, and finished product standards
  • Support inventory, ordering, waste tracking, and food cost control
  • Work with FOH and management to keep service smooth and communication clear
  • Contribute ideas for specials, seasonal menus, events, and process improvements
