The role of Sous Chef of Campus Dining at UA-PTC is an integral position within the Culinary Arts and Hospitality Management Institute (CAHMI). This full-time, regularly scheduled staff position supervises the day-to-day food service and catering operations across multiple campus dining locations including North Little Rock, South Location, Business and Industry Center, and the North Little Rock Aviation Location. Reporting directly to the Director of Campus Dining and Events, the Sous Chef is responsible for maintaining high-quality food standards, menu preparation with cost-effective management, and overseeing all aspects of food production and event catering.
The Sous Chef's responsibilities encompass a dynamic range of duties such as menu planning, quality control, hygiene and safety standards adherence, staff supervision, training, and schedule management. The role demands flexibility to work nights and weekends to support campus events and requires travel between campus locations. Additionally, this position involves monitoring food and labor costs, inventory management, ordering supplies, and coordinating with various departments to ensure seamless event hospitality services.
Candidates are expected to have a strong background in culinary arts, with at least five years of relevant foodservice experience or an Associate's degree in Culinary Arts accompanied by leadership abilities and excellent organizational and communication skills. Certification from the American Culinary Federation (ACF), such as Certified Culinarian or higher, is required, with preferences for higher certifications and ServSafe credentials.

Job Requirements
- associate's degree in culinary arts or related field from a regionally accredited institution preferred
- American Culinary Federation certified as Certified Chef de Cuisine or higher preferred
- ServSafe certified preferred
- five years of applicable foodservice experience with inventory and purchasing knowledge or associate's degree in culinary arts or related field with two years of foodservice experience

Job Duties
- prepare and coordinate menus for daily food service and catering events
- maintain high standards of quality control, hygiene, and health and safety
- work flexible night and weekend shifts for events
- ensure proper setup of events with floor plans and trained event staff
- supervise and train kitchen team members including work study and practicum students
- ensure high quality food preparation and presentation according to recipes
- write schedules, evaluate and direct all team members
- maintain open communication between management and team
- take immediate action on kitchen problems and handle disciplinary actions
- monitor and control food and labor costs
- complete weekly inventories and maintain compliance records
- order ingredients and supplies
- maintain kitchen and service equipment
- maintain menu and pricing for POS systems and oversee checkout
- collaborate with faculty and staff for special event catering
- keep certifications such as ServSafe Manager and American Culinary Federation
- communicate professionally and adapt to change
- coordinate with other departments for hospitality services and cleaning
- assist Director of Campus Dining to promote college goals and reputation
- perform other assigned duties
