The role of the culinary leader at Legends Global within the Mayo Civic Center in Rochester, MN, embodies the company’s commitment to delivering premium guest experiences by ensuring seamless culinary operations. Reporting directly to the Executive Chef and Executive Sous Chef, this position is crucial in overseeing all culinary functions including production, daily operations, and maintaining the highest food safety and sanitation standards. This role requires a dynamic individual capable of managing high-volume, full-service food operations and innovating menu offerings aligned with guest and client feedback. Key responsibilities include managing labor and food costs, ensuring product quality, developing recipes and menu specifications, and maintaining meticulous compliance with health regulations. The position also has supervisory responsibilities including interviewing, training, and performance management of kitchen staff, requiring strong leadership and communication skills.

Job Qualifications
- Degree or certification from an accredited culinary arts institute or apprenticeship certification from the American Culinary Federation
- minimum three years experience in a high-volume full-service food operation
- proven track record in improving kitchen efficiencies, quality and relative costs
- excellent leadership skills
- strong financial analysis capabilities
- effective team building and communication skills
- knowledge of kitchen sanitation, operation and maintenance of kitchen equipment
- detail-oriented
- proficient in Microsoft Word, Excel and PowerPoint
- flexible to work early mornings, nights, weekends and holidays
- ability to obtain Food Protection Manager Certification
Job Duties
- Overall management of culinary operations assigned to department
- coordinate and actively participate in event operations and monitor food and labor cost
- ensure all products used in the preparation of menu items meet high standards
- collaborate in development of innovative menu offerings based on guest and client feedback
- lead team with respect and commitment to exceeding guest expectations daily
- monitor all food preparation and kitchen activities to ensure compliance with health department regulations
- write, cost, test, maintain and update all menu specifications, recipes, and production forecasts
- adhere to and enforce inventory and labor control measures
- maintain positive customer and client relations through effective communication and prudent financial practices
- ensure all workstations, storerooms and dining areas remain clean, sanitized, safe and in proper working order
- perform supervisory responsibilities including interviewing, hiring, training, planning and directing work, appraising performance, rewarding and disciplining employees, addressing complaints and resolving problems
- provide incidental or short-term support to other facilities in case of emergency
- other duties as assigned
