The role of Sous Chef at Bellagio’s Garde Manger is a distinguished position within MGM Resorts’ culinary team. This role places you in the heart of one of the most acclaimed kitchens on the Strip, where the art of luxury dining meets innovative culinary techniques. As a Sous Chef specializing in cold dishes, you will lead a skilled team, overseeing the preparation and presentation of creative and high-quality dishes that captivate a diverse, discerning clientele. The position requires a blend of creativity, precision, leadership, and operational expertise in a dynamic, fast-paced environment. You will train and guide Master Cooks, Cooks, Pantry Workers, and Helpers to ensure every dish reflects the Bellagio’s standards of excellence and culinary artistry.

In addition to supervising kitchen staff, you will play a critical role in managing inventory, requisitions, and kitchen sanitation practices. Your ability to maintain the highest standards of food quality and safety, handle communication between kitchen and service staff, and contribute to purchasing and menu decisions will be essential. Partnering closely with the Executive Chef, you will help establish goals and objectives that focus on profitability, product quality, and team development. This position demands flexibility, including availability for varied shifts, weekends, and holidays, and values experience with unionized work environments. Job Requirements

  • Work varied shifts, to include weekends and holidays
  • High school diploma or GED
  • 2 plus years of prior relevant experience as a supervisor or chef in a culinary environment
  • Experience managing employees using a collective bargaining agreement preferred

Job Duties

  • Train master cooks, cooks, pantry workers and helpers on job responsibilities
  • Ensure requisitions are processed properly and placed in designated area
  • Label and date all products to ensure safekeeping and sanitation
  • Maintain knowledge, understanding and preparation of base sauces, stocks and soups
  • Ensure food quality is superior and take action to correct any irregularities
  • Communicate with management and service staff in order to fulfill and address any issues or needs requested by guests and employees
  • Assist the executive chef by controlling purchasing, receiving, purveyor lists and inventory of all kitchen items
  • Prepare and administer kitchen schedule
  • Assist executive chef by establishing goals and objectives that focus on profit, product and people
