The role of Sous Chef at Carrollwood Day School in Tampa, Florida is a full-time position that plays a crucial role within the culinary team, reporting directly to the Executive Chef. The Sous Chef is responsible for assisting in the preparation and cooking of food, coordinating the activities of cooks and other foodservice associates, and stepping in to oversee kitchen operations in the Executive Chef’s absence. This position offers a competitive hourly wage ranging between $21.00 and $25.00, with a Monday through Friday day shift schedule and occasional evening hours. The role demands a candidate who thrives in a high-volume food service setting, as it involves supervising hourly associates, ensuring food safety and sanitation compliance, maintaining production standards, and engaging positively with customers.

Job Requirements

  • Previous 3 years of culinary experience in high volume food service setting preferred
  • Ability to work full time Monday through Friday with occasional evenings
  • Strong leadership and supervisory capabilities
  • Knowledge of food safety, sanitation and portion control
  • Effective communication skills
  • Ability to stand for extended periods and perform physical tasks associated with kitchen work
  • Flexibility to adapt to production demands
  • Must comply with company food safety standards and policies
  • Capability to manage multiple priorities simultaneously

Job Qualifications

  • Previous 3 years of culinary experience in high volume food service setting preferred
  • Proven supervisory skills including interviewing, scheduling, training and counseling
  • Knowledge of food safety and sanitation standards
  • Strong communication and customer service skills
  • Ability to work a full time schedule Monday through Friday with occasional evenings
  • Culinary degree or relevant certification is a plus
  • Ability to maintain composure in fast-paced environment
  • Strong organizational and inventory management skills

Job Duties

  • Cooks and prepares food following approved recipes and production standards
  • Ensures all deadlines are met based on production orders
  • Supervises hourly food service associates, including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action as appropriate
  • Stores food in designated areas following all corporate, state and federal food safety and sanitation procedures
  • Ensures proper food handling, presentation, portion control and maintenance of appropriate serving temperatures
  • Maintains sanitation of equipment, supplies and utensils
  • Cleans workstation thoroughly before leaving area
  • Keeps display equipment clean and free of debris during meal service to comply with all sanitation, safety, production and merchandising requirements
  • Interacts with customers to resolve complaints in a friendly, service-oriented manner
  • Relays relevant information directly to supervisor
  • Demonstrates complete understanding of daily menu items and accurately explains them to associates and customers
  • Keeps up with peak production and service hours
  • Monitors inventory and deliveries of product and supplies
  • Tracks product production, consumption and waste
  • Informs supervisor when supplies or product are low
  • Performs other duties as assigned
