The Sous Chef position at Canteen is a full-time role based at Fox Valley Technical College in Appleton, Wisconsin. This position operates Monday through Friday during the day shift and offers a competitive hourly wage ranging from $20.00 to $23.00. The successful candidate will be instrumental in supporting the Executive Chef by preparing and cooking food, managing kitchen operations, and supervising hourly foodservice associates. This role requires at least four years of sous chef experience, underscoring the importance of expertise in culinary preparation, kitchen management, and team leadership.

In this pivotal role, the Sous Chef will ensure adherence to corporate, state, and federal food safety and sanitation standards. Responsibilities include cooking and preparing food according to approved recipes and production standards, supervising and training kitchen staff, scheduling, and managing payroll processes. The Sous Chef also ensures proper food handling, presentation, and portion control while maintaining appropriate serving temperatures. Maintaining a clean and sanitary workspace, managing inventory control, and interacting directly with customers to resolve service issues are key aspects of this role.

Job Requirements

  • Minimum 4 years of sous chef experience
  • High school diploma or equivalent
  • Ability to work full-time Monday through Friday day shift
  • Must be able to comply with corporate, state, and federal food safety regulations
  • Capable of supervising and training kitchen staff
  • Strong organizational skills and attention to detail

Job Duties

  • Cooks and prepares food following approved recipes and production standards
  • Ensures all deadlines are met based on production orders
  • Supervises hourly food service associates including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action as appropriate
  • Stores food in designated areas following all corporate, state and federal food safety and sanitation procedures
  • Ensures proper food handling, presentation, portion control and maintenance of appropriate serving temperatures
  • Maintains sanitation of equipment, supplies and utensils
  • Cleans workstation thoroughly before leaving area
  • Keeps display equipment clean and free of debris during meal service
  • Interacts with customers to resolve complaints in a friendly, service-oriented manner
  • Relays relevant information directly to supervisor
  • Demonstrates complete understanding of daily menu items and accurately explains them to associates and customers
  • Keeps up with peak production and service hours
  • Monitors inventory and deliveries of product and supplies
  • Tracks product production, consumption and waste
  • Informs supervisor when supplies or product are low
  • Performs other duties as assigned
