The role of Sous Chef at the Episcopal School of Knoxville presents an exciting opportunity to join this passionate team. This full-time position involves working Monday through Friday, from 7:00 am to 4:00 pm, focusing on kitchen leadership and food production. The Sous Chef works directly under the Executive Chef, assisting with the preparation and cooking of foods while coordinating the activities of cooks and other food-service associates. As a key player in the kitchen management team, the Sous Chef assumes responsibility for the kitchen and food-service team in the absence of the Executive Chef.

The position requires previous kitchen leadership and food production experience. It offers a competitive pay range from $22.00 to $25.00 per hour, reflecting the importance of the role in maintaining high standards in food preparation and safety. The work environment includes the availability of free meals, uniforms, and laundering services at select locations, enhancing the overall employee experience. The ideal candidate will be skilled in following approved recipes and production standards, supervising hourly food service associates, and ensuring compliance with all food safety regulations.

Key responsibilities include managing food storage and presentation, maintaining sanitation of equipment and workstations, interacting courteously with customers to resolve complaints, and monitoring inventory and product deliveries. The Sous Chef is expected to demonstrate a thorough understanding of daily menu items and efficiently manage peak production and service hours. This position requires strong leadership skills to recruit, train, counsel, and evaluate team members, fostering a collaborative and productive kitchen environment.

Job Duties

  • Cooks and prepares food following approved recipes and production standards
  • Ensures all deadlines are met based on production orders
  • Supervises hourly food service associates including interviewing, scheduling, payroll, training, counseling, participating in reviews, and recommending disciplinary action as appropriate
  • Stores food in designated areas following all corporate, state, and federal food safety and sanitation procedures
  • Ensures proper food handling, presentation, portion control, and maintenance of appropriate serving temperatures
  • Maintains sanitation of equipment, supplies, and utensils
  • Cleans workstation thoroughly before leaving area
  • Keeps display equipment clean and free of debris during meal service
  • Interacts with customers to resolve complaints in a friendly, service-oriented manner
  • Demonstrates complete understanding of daily menu items and accurately explains them to associates and customers
  • Keeps up with peak production and service hours
  • Monitors inventory and deliveries of product and supplies
  • Tracks product production, consumption, and waste
  • Informs supervisor when supplies or product are low
  • Performs other duties as assigned
