The role of Food Preparation Coordinator within Boyd Gaming is integral to maintaining the highest standards of culinary excellence and operational efficiency in our kitchens. This position works directly under the guidance of the Executive Chef to coordinate and administer all aspects of food preparation, presentation, and service. A key responsibility of this role is to ensure the consistency, flavor, and quality of food served meet the established company standards while also managing portion control to achieve cost efficiency and minimize waste. The Food Preparation Coordinator will monitor the quantity of food prepared on a daily basis and ensure proper rotation and utilization of stored food to uphold food safety and reduce spoilage.
This role also involves supervising kitchen staff, including delegating work assignments, monitoring employee performance, and providing necessary instruction and disciplinary actions when required. Maintaining appropriate staffing levels, addressing overtime requests, and ensuring the kitchen and storage areas comply with health and safety standards are additional vital duties. This job is physically demanding, requiring the ability to stand, walk, lift, and maneuver heavy items regularly. Excellent communication skills and the capacity to maintain relevant certifications are essential for success.

Job Requirements
- High school diploma or equivalent
- One year of experience in food preparation or culinary position preferred
- Ability to stand and walk for majority of shift
- Ability to lift, carry, and maneuver up to 40 pounds
- Physical capability to perform grasping, reaching, bending, lifting, and kneeling
- Strong communication skills
- Ability to obtain and maintain necessary licenses and/or certifications
- Adherence to health and safety standards and guidelines
Job Qualifications
- One year of experience in the same or similar position preferred
- Must be able to stand and walk for majority of shift
- Must be able to lift, carry, and maneuver up to 40 pounds
- Other physical demands include but are not limited to grasping, reaching, bending, lifting, and kneeling
- Must have excellent communication skills
- Must be able to obtain and maintain any necessary licenses and/or certifications
Job Duties
- Coordinate and administer all food preparation, presentation, and service procedures as directed by the Executive Chef
- Monitor quantity of prepared food and ensure that quality and quantity standards are consistently satisfied
- Ensure proper rotation and utilization of stored food to prevent waste
- Oversee food preparation to ensure proper consistency, flavor, presentation, and portion control
- Monitor staffing levels, early out requests, and overtime
- Monitor and ensure kitchen and storage areas are clean, sanitary, and meet health and safety standards
- Delegate work assignments to cooks and other kitchen staff
- Monitor employee performance, instruct employees in the proper performance of job duties, and administer disciplinary action
- Requisition stock according to business needs
- Ensure that the kitchen, storage areas, and other related areas are kept clean and free of safety hazards
