Job Requirements
- Must obtain and maintain all licenses and certifications per federal, state and Virginia Lottery regulations
- must successfully pass background check
- must successfully pass drug screening
- must be at least twenty-one years of age
- must be able to work holidays, weekends and flexible shifts
Job Qualifications
- Minimum eight years of progressive food preparation experience or completion of a culinary arts degree or accredited apprenticeship with four years of progressive experience and at least one year in a supervisory role
- strong knowledge of federal, state and local food laws, safety and sanitation practices
- understanding of food preparation techniques including stocks, soups, sauces, and various meats
- demonstrated organizational and budgeting skills
- ability to communicate clearly and professionally
- leadership and coaching skills
- experience in managing kitchen operations and financials
Job Duties
- Create an atmosphere that induces guests to choose Hard Rock Casino Northern Indiana for gaming entertainment
- act as a mentor to team members to provide superior guest service
- hire, train, motivate, evaluate and supervise staff
- establish and maintain training and development procedures
- maintain department objectives, standards, guidelines and budget
- monitor food purchasing, staffing, food preparation and food inventory to control food and labor cost and waste
- monitor and evaluate food preparation and consistency
- assist in developing menu changes
- monitor and advise on food storage and compliance with health requirements
- operate and maintain kitchen equipment
- attend and participate in meetings
- perform work regularly and predictably
- clean and sanitize work and public spaces
- perform other duties as assigned
