The role available is pivotal within the kitchen and culinary operations of the company, primarily focusing on overseeing food production across multiple outlets, including a bowling lounge and food truck operations. The position demands a hands-on leader capable of managing daily kitchen workflows, ensuring high standards of food quality, consistency, and timely service. Beyond kitchen management, the successful candidate will lead staff, supervise schedules, and enforce critical safety and sanitation policies. They will also handle important administrative tasks such as inventory control, vendor relations, and food cost management aimed at waste reduction and efficiency.
This position requires an individual with strong leadership skills who can act as the manager on duty in the absence of senior chefs, coaching and mentoring kitchen staff to enhance their performance. The candidate will coordinate closely with front-of-house teams and other culinary staff to execute banquets, events, and large-scale buyouts successfully. The job also involves adapting to fluctuating resort occupancy and seasonal demand, ensuring all outlets function seamlessly together regardless of volume.
This leadership role suits candidates with a minimum of two years' progressive kitchen leadership experience, preferably in high-volume casual dining and event/batch cooking settings. Job Requirements
- High school diploma or equivalent
- Minimum 2 years of kitchen leadership experience
- Experience with multi-outlet kitchen operations preferred
- Ability to manage schedules and staff

Job Duties
- Oversee daily food production for the bowling lounge ensuring quality consistency and timeliness
- Direct and support food truck operations including prep execution and logistics
- Execute and supervise BEOs and large-scale buyouts with attention to detail and timelines
- Ensure all food meets company standards for presentation taste and portioning
- Act as the manager on duty in the absence of salaried chefs
- Supervise coach and develop line cooks and prep staff
- Assist in scheduling based on business volume across multiple outlets
- Enforce kitchen policies safety standards and sanitation procedures
- Assist with inventory control ordering and vendor management
- Support food cost management through waste reduction portion control and proper ordering
- Maintain accurate prep lists and production plans aligned with business needs
- Ensure compliance with health department regulations and HACCP guidelines
- Coordinate execution of BEOs with front-of-house and culinary teams
- Lead culinary operations for private events and full venue buyouts
- Ensure seamless integration between restaurant and food truck production
- Adapt quickly to fluctuating resort occupancy and seasonal demand
