The Sous Chef (Catering) position at Westminster-Canterbury on Chesapeake Bay is a full-time, exempt, salaried role reporting directly to the Executive Chef. This role requires a highly skilled culinary professional with a flexible schedule, including availability on weekends and holidays. As a critical member of the Dining Services Team, which encompasses dining room service, catering, culinary, and healthcare dining professionals, the Sous Chef (Catering) plays an essential role in delivering exceptional dining experiences. Candidates will supervise the preparation of specialized catering menus, plated meals, buffet displays, and decorative garnishes, ensuring adherence to recipe consistency and dietary needs. Job Requirements

  • Ability to stand and walk for 6 to 8 hours per shift
  • Full range of motion including walking, reaching, bending, lifting, grasping, pushing, pulling, stooping, and kneeling

Job Qualifications

  • Minimum 3-5 years of catering experience
  • Minimum 5 years of culinary experience in high-volume food production
  • Ability to work all hot and cold kitchen stations
  • Expertise in cooking techniques, food plating, garnish design, and ingredient management
  • Experience in menu development and catering package creation
  • Knowledge of food cost control, portion management, and inventory procedures
  • Deep understanding of health, safety, and sanitation regulations including HACCP
  • Maintains professional and clean appearance at all times

Job Duties

  • Oversee and manage culinary preparation for catering functions, private banquets, and daily dining production
  • Supervise prep and execution of catering menus, plated meals, buffet displays, and garnishes
