Job Requirements

  • High school diploma or G.E.D. or equivalent experience
  • ServSafe Manager Certification
  • 2 years cooking in a commercial kitchen
  • 1 year supervisory or Sous Chef experience
  • Ability to create recipes and menus
  • Working knowledge of responsible alcohol beverage service
  • Effective communication skills with guests and team members
  • Leadership and guidance skills
  • Ability to prioritize and multitask
  • Working knowledge of MS Word and Excel
  • Professionalism and composure
  • Ability to follow verbal and written directions
  • Ability to accept constructive criticism
  • Ability to communicate effectively in English
  • Ability to lift and carry up to 50 lbs
  • Ability to stand and walk for up to eight hours
  • Ability to bend, stoop, push, and pull
  • Ability to work in a smoking environment
  • Ability to drive catering vehicles
  • Ability to maintain a good driving record

Job Qualifications

Job Duties

  • Maintains efficient operation of the kitchen by assigning duties to kitchen staff
  • communicates departmental information to staff
  • instructs personnel on food service policies and procedures
  • corrects out of compliance behaviors
  • regulates food product utilization
  • drafts food production sheets
  • monitors kitchen staff performance
  • performs production cook duties as needed
  • Prepares and cooks food according to recipes and menu or catering requests
  • chops, slices, dices, bakes, fries, bastes, boils, sautés, steams, grills, marinates, portions desserts and condiments
  • ensures cold and hot food wells are filled and replenished
  • Assists the Chef by training production cooks and catering staff
  • provides guidance on portion control and food presentation
  • monitors and evaluates team member performance
  • conducts performance appraisals
  • provides counseling and corrective action
  • generates necessary paperwork
  • reports discrepancies
  • Ensures safe and sanitary kitchen and storage areas by checking food temperatures and freshness
  • rotates food items
  • maintains proper cooling, reheating, and storage
  • cleans counters, shelves, refrigerators, wells, and surrounding areas
  • organizes storage
  • restocks products
  • follows proper supply and equipment usage
  • Assists with on-site and off-site catering events by managing setup, cooking, cleaning, working the event, and breaking down equipment and supplies
  • Completes all duties and responsibilities of the Chef in their absence
