The Sous Chef role at Atlantis Casino Resort Spa is a critical leadership position within its culinary team. Reporting directly to the Chef De Cuisine and Executive Sous Chef, the Sous Chef acts as the primary kitchen manager during the absence of the Chef De Cuisine, demonstrating strong leadership, coaching, and organizational capabilities daily. This role involves maintaining a motivational and approachable environment where management and team members work cohesively to achieve set objectives and encourage constructive feedback. The Sous Chef actively participates in menu development and ensures all food preparation adheres to established policies and procedures. They are responsible for overseeing daily culinary operations, including food quality, cost control, staff supervision, equipment maintenance, and compliance with health and safety standards. Working in a fast-paced, high-volume environment, the Sous Chef must plan and direct culinary activities to meet the food and labor cost budgets while maintaining professional food quality.

The role requires a hands-on leader who can manage kitchen staff effectively, handle administrative duties, recruit new team members, and resolve arising issues promptly to maintain smooth operations. Physical demands of the job include standing, walking, lifting up to 50 pounds, and performing various physical kitchen duties requiring stamina and dexterity. The ideal candidate should have at least five years of cooking experience and a minimum of one year in a similar leadership role, preferably within deluxe hotels or reputable standalone restaurants. Adherence to grooming standards, including no visible tattoos, piercings, or unnatural hair colors, is mandatory to align with company policies.

Job Requirements

  • minimum of 5 years of cooking experience

Job Duties

  • participate in the development of menus and specifications accordingly
  • uphold all policies and procedures set forth by the executive chef
  • plan and direct all daily, weekly, monthly cleaning projects
  • meet food purchase specifications and recipes
  • monitor food and labor costs
  • maintain the highest professional food quality
  • plan and direct food preparation and culinary activities
  • estimate food requirements according to food/labor costs budget
  • supervise kitchen staffs activities
  • monitor and report all equipment that is in dis-repair, monitor all outstanding engineering issues
  • recruit and manage kitchen staff
  • rectify arising problems or complaints
  • perform administrative duties
  • comply with nutrition, sanitation regulations, and safety standards
  • keep time and payroll records
  • maintain a positive and professional approach with coworkers and customers
  • other duties as assigned by management
