The position of Sous Chef at Palisades Tahoe is a critical leadership role within the culinary department, responsible for assisting in overseeing daily kitchen operations and food production. This year-round, hourly role offers a competitive wage ranging from $20.54 to $28.69 per hour, with compensation influenced by factors such as experience, education, location, and performance. The Sous Chef ensures that all culinary offerings meet the high standards of quality, consistency, taste, and presentation that guests expect, while closely managing food costs and inventory. This role also involves training and supervising kitchen staff, supporting menu development and pricing for events, and maintaining a clean and compliant kitchen environment following health and safety regulations.
In this role, leadership and organizational skills are paramount as the Sous Chef directs food preparation activities, assigns tasks to cooks, and assumes the responsibilities of the head chef when necessary. The role demands an ability to handle multiple concurrent tasks efficiently, promote effective communication across all levels of the organization, and contribute to the overall guest experience through culinary excellence. Job Duties
- Assist with producing the menu and prepare items on the menu
- Ensure food portion size, visual appeal, taste and temperature of items served
- Supervise food preparation and employees engaged in preparing, cooking, and serving meats, sauces, vegetables, soups, and other foods
- Maintain quality and portion control in all phases of food preparation
- Plan sequence and time of cooking operations to meet meal-serving hours
- Assign specific tasks to cooks
- Maintain clean and orderly food and beverage facilities at all times
- Assure compliance with all health and safety code
- Manage inventory and stocking of food items
- Assist with planning and pricing of menus for events
- Establish portion sizes and standards of service for all menu items
- Train kitchen personnel in food production principles and practices
- Schedule kitchen employees in conjunction with business forecasts and predetermined budget
- Supervise or assist subordinates in performing duties
- Maintain standard for all grooming and uniform policies
- Assume the chef's responsibilities when the chef is not present
