The Four Seasons Resort Hualalai is currently seeking a passionate and dynamic Sous Chef to join its culinary team. As a Sous Chef at Four Seasons Resort Hualalai, you will be responsible for leading and motivating the kitchen staff, overseeing food production, and ensuring that all dishes meet the resort's exacting standards for taste, presentation, and consistency. Your leadership will extend beyond day-to-day kitchen operations to encompass recipe development, inventory management, sanitation compliance, and fostering seamless communication across departments. With an emphasis on collaborative teamwork and employee development, you will mentor and coach employees, driving a culture of excellence that resonates throughout the culinary team.
The position demands a strong understanding of labor and cost control, allowing for effective scheduling, budgeting, and purchasing to optimize operational efficiency. You will uphold stringent sanitation and safety regulations in line with Four Seasons policies as well as local, state, and federal laws, ensuring a clean, safe, and organized kitchen environment at all times. Furthermore, you will actively participate in operational meetings to align culinary services with broader resort goals, encouraging interdepartmental cooperation and elevating the overall guest experience.
This role requires the flexibility to work weekends and holidays as business demands, reflecting the hospitality industry's dynamic nature. Candidates must be legally authorized to work in the United States and comply with local health regulations, including obtaining a Tuberculous (TB) clearance card as mandated by the Hawaii State Department of Health. With 3 to 5 years of experience in culinary or food and beverage line roles, or 1 to 2 years in supervisory or assistant management positions, the ideal Sous Chef embodies both culinary expertise and leadership capabilities.

Job Duties
- Select, train, evaluate, lead, motivate, coach, and discipline all employees in the kitchen’s food production area to ensure that established cultural and core standards are met
- Assist in the planning and development of recipes, and ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration
- Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control
- Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen
- Maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality
- Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments
