The role of Sous Chef at Boyd Gaming is an exciting opportunity for culinary professionals who are passionate about food quality, guest satisfaction, and team development. This position is centered on providing direct and general supervision to the culinary team during assigned shifts, ensuring that food preparation meets the high standards expected by the company and its guests. Responsibilities of the Sous Chef include overseeing all cooking operations, monitoring the quality and presentation of food, controlling portion sizes, and ensuring timely delivery of dishes. The position also requires managing culinary staff – from scheduling and training to evaluating and developing their skills. The Sous Chef collaborates closely with other key management personnel including the Assistant General Manager, General Manager, and Restaurant Chef, maintaining open communication between front-of-house and back-of-house operations. Additionally, the role involves ensuring compliance with health department regulations, maintaining kitchen equipment, and assisting with recipe costing and documentation.

Job Requirements

  • Completion of a culinary arts degree or accredited apprenticeship and/or four years of progressive food preparation experience
  • Minimum of one year in a supervisory capacity or equivalent combination of training, education and experience
  • Computer literacy including Excel Spreadsheet and Word experience
  • Possession of and ability to obtain and maintain valid drivers and gaming license within assigned state of employment and other jurisdictions
  • Must successfully pass background check
  • Must successfully pass alcohol and drug screening
  • Must be 21 years of age

Job Qualifications

Job Duties

  • Oversee all cooking operations including methods of preparation, portion control, monitoring timeliness of food delivery and garnishing
  • Staff, schedule, evaluate, train, develop and monitor culinary team
  • Understand department objectives, standards, guidelines and budget to achieve effective supervision of department
  • Monitor labor costs including staffing levels and adjust to sales levels and business volumes
  • Monitor and advise on storage of food items to ensure quality of food and compliance with health requirements
  • Ensure all kitchen equipment and working conditions are well-maintained including HotSos entries
  • Assist Restaurant Chef with writing and cost-control of recipes and developing a collection of recipes
