The Sous Chef position at Arrowhead plays a crucial role in maintaining the high standards of culinary excellence that the restaurant and event catering services are known for. This role involves overseeing and coordinating the preparation and production of food for diverse occasions such as banquets, weddings, golf outings, and off-premises events, as well as supporting the restaurant and bar menu. The Sous Chef is responsible for managing food quality, ensuring sanitation compliance, developing innovative menus, and controlling food costs through effective inventory management while fostering a positive and efficient kitchen environment. The position demands leadership in staff management, including training, scheduling, conducting performance evaluations, and ensuring all kitchen certifications are valid and up-to-date. By collaborating closely with the Executive Chef and operational directors, the Sous Chef ensures seamless culinary operations, timely food delivery, and an outstanding dining experience for both internal and external customers.

Job Requirements
- Must be a high school graduate or GED equivalent
- Must have at least three years of experience in a Sous Chef position
- Must have or be in the process of obtaining a Food Sanitation Certificate
- Must be at least 18 years of age
- Must have experience managing a staff of at least eight for at least two years
- Must have knowledge of cooking techniques and kitchen operations
- Must maintain a valid driver’s license
- Must be CPR/AED certified or obtain certification within 90 days
- Must have Illinois food sanitation and Basset certificates
- Must be able to work extended hours including nights, weekends, and holidays
- Must be physically able to stand for long periods, lift items over 50 lbs with assistance, and work in a kitchen environment with exposure to cleaning chemicals and varying noise levels
Job Qualifications
- High school graduate or GED equivalent
- Minimum three years of experience as a Sous Chef
- Knowledge of sauces, soups, cold and butcher preparations, roasting, frying, grilling
- Experience managing staff of at least eight employees for two or more years
- Strong problem-solving, organizational, interpersonal, and communication skills
- Valid driver’s license with acceptable driving record
- CPR/AED certified or ability to obtain within 90 days
- Illinois food sanitation certificate
- Basset certificate
Job Duties
- Oversee food production for banquets, weddings, golf outings, and off-premise events
- Develop menus, food purchase specifications, and recipes
- Ensure compliance with food quality and sanitation standards
- Manage kitchen staff certifications and training
- Monitor food inventory to control waste and costs
- Coordinate with banquet and restaurant staff for event execution
- Create staff schedules and approve timecards
- Prepare food and expedite service during peak periods
- Maintain accurate recipes, prep guides, and costing
- Conduct food preparation area inspections for cleanliness and safety
- Substitute for cooks during busy times or emergencies
- Enforce portion control and waste guidelines
- Support safety, health, and loss control policies
- Manage hiring, training, coaching, and evaluating kitchen staff
- Provide high-quality customer service to internal and external customers
