Job Requirements

  • Be familiar with basic and advanced cooking methods
  • able to work long hours including weekends and holidays
  • provide cutting tools and calibrated food grade thermometer
  • maintain knowledge of EcoSure food safety and health report

  • ability to motivate and lead a culinary team
  • able to communicate effectively with team and management
  • committed to maintaining kitchen cleanliness and safety standards

Job Qualifications

  • College graduate in culinary arts preferred
  • 3+ years experience in a high volume professional kitchen
  • basic allergy knowledge
  • full knowledge of correct cooking temperatures for vegetables and proteins
  • knowledge of state health codes and food safety requirements
  • active food handler's certification
  • strong organizational skills
  • ability to work independently
  • physical ability to stand for long periods and lift 50 pounds
  • energetic personality
  • age 21 or older

Job Duties

  • Attract, retain, and motivate the best culinary talent
  • act in the absence of the executive chef to complete daily ordering using par levels for all outlets, employee cafeteria, and banquets
  • perform any culinary department function including cook and steward roles
  • conduct daily kitchen walk throughs to identify and recommend corrections, repairs, cleanliness improvements
  • conduct daily team meetings to ensure preparation and communication of pertinent information
  • attend weekly F&B meetings, BEO meetings, leadership meetings, monthly safety meetings while representing the culinary team
  • manage departmental finances, analyze and control costs, manage the budget to achieve profitability
  • ensure knowledge and management of food allergens with high urgency for guests with allergies
  • update and ensure proper use of prep sheets daily
  • guide nightly cleaning of kitchen and follow up with stewarding crew
  • assist Executive Chef in creation, costing, and implementation of seasonal and special menus
