The Carolina Hurricanes, in partnership with Lenovo Center, is seeking a dedicated and experienced Sous Chef to join their culinary team supporting operations at a premier high-volume sports and entertainment venue. The Sous Chef will play a pivotal role in supporting the Chef de Cuisine by leading daily kitchen activities that ensure flawless food quality, operational efficiency, and team performance. Job Requirements

  • Must pass a criminal background check
  • ability to work extended hours, including nights, weekends, and holidays based on event schedules

Job Qualifications

  • Culinary degree or equivalent professional experience
  • 4-6 years of experience in high-volume culinary environments such as sports venues, convention centers, hotels, or large-scale catering operations
  • strong understanding of kitchen operations, food safety, and high-volume production
  • experience with concessions, commissary, or multi-outlet food service operations preferred
  • proven ability to maintain food quality and consistency in fast-paced environments
  • hands-on leadership style with strong coaching and team development skills
  • working knowledge of inventory management, food cost control, and kitchen systems
  • strong communication and organizational skills
  • proficiency with basic administrative tools such as scheduling, inventory systems, Microsoft Office

Job Duties

  • Execute menu items to ensure consistency in quality, taste, presentation, and temperature across all service areas
  • maintain high culinary standards and monitor production to ensure speed, accuracy, and adherence to recipes
  • partner with the Chef de Cuisine on menu development, balancing quality, efficiency, and cost
  • oversee daily kitchen operations including prep, production, service, and breakdown
  • maintain clean, organized, and fully stocked kitchen and storage areas
  • manage inventory, product rotation, and waste to support freshness and cost control
  • supervise, train, and develop kitchen staff, fostering accountability and teamwork
  • support hiring and onboarding while providing hands-on leadership during service
  • ensure team adherence to food safety, equipment use, and operational standards
  • maintain compliance with all health, safety, and sanitation regulations
  • promote a safe and clean working environment through proper food handling and safety practices
  • assist with scheduling, labor management, and payroll accuracy
  • support process improvements and complete operational tasks within established timelines
