The Executive Sous Chef role at Busch Gardens is a pivotal position that directly supports the Executive Chef in overseeing the wide variety of culinary operations throughout the park. This role involves managing food cost and recipe development, contributing to menu planning including seasonal and special event menus, and ensuring high standards of food quality, safety, and consistency. As a key part of the culinary team, the Executive Sous Chef will take on responsibilities for training new staff and managing food inventories for events and banquets, ensuring smooth and efficient service. The role requires flexibility in scheduling, as event times may vary and include nights, weekends, and holidays. This position is ideal for culinary professionals who thrive in a high-volume, fast-paced environment and are passionate about delivering excellent guest experiences.

In addition to culinary expertise, the Executive Sous Chef will engage in strategic planning and operational support, working closely with various teams to ensure food and beverage offerings align with guest expectations and park standards. The candidate should have strong skills in food cost management and inventory control, as well as familiarity with catering and banqueting operations. Proficiency with Microsoft Office tools like Excel and Outlook is essential for tracking costs and scheduling. Job Requirements

  • Ability to lift, push, pull and/or carry up to 50 lbs
  • Position engages in extensive walking and standing throughout entire work shift and climb/ascend heights, if needed
  • Perform physical activities including kneeling, squatting, bending floor-to-waist/waist-to-overhead, reaching overhead, simple grasp and fine hand manipulation tasks
  • Ability to work indoors and outdoors in varying weather conditions including extreme heat
  • Position may be exposed to fumes, dust, odors and cold/heat temperature extremes
  • Perform cleaning duties including use of cleaning chemicals
  • Work a flexible schedule based on business needs including opening, mid, and closing shifts, nights, weekends and holidays
  • Flexibility in work locations as placement depends on business needs and career development opportunities

Job Qualifications

  • Two or more years of experience as a sous chef
  • 3-5 years of experience in a high-volume setting
  • Intermediate knowledge in food cost management
  • Understanding of catering
  • Previous experience in inventory management control
  • In-depth knowledge of food and safety standards, protocols, and dietary needs
  • Proficiency with Microsoft programs such as Excel and Outlook
  • Experience managing multiple food and beverage outlets a plus
  • Experience within a theme park setting
  • Detail-oriented with strong multi-tasking and time-management skills
  • Excellent communication and interpersonal abilities
