The Sous Chef role is a key leadership position within the back of house team, reporting directly to the Executive Chef and working closely with the Owners and Service Director to ensure smooth kitchen operations. This position carries significant responsibility, overseeing all aspects of the guest's food experience, from the initial creation of menu items to ensuring that every dish meets the restaurant's high standards for quality and presentation. As a Sous Chef, you will be the steward of kitchen efficiency and cleanliness, managing labor and food cost budgets, leading staff training, and ensuring all recipes and procedures are documented and followed meticulously.

This is a full-time, hourly position requiring weekend availability, with shifts typically structured as 8 hours per day, including day and evening shifts. The pay range is $27 to $32 per hour, which includes base pay plus expected hourly tips, and benefits are available for full-time team members including health insurance and paid sick time. - Knowledge of high-end kitchen environments and numbers-oriented chains
- Ability to run an exceedingly clean kitchen
- Strong relations with front of house staff
- Certified in CPR and First Aid
- Serve Safe certified
- Passionate about food and service
- Strong leadership and communication skills
Job Duties
- Develops new menu items under direction of owner and documents recipes and procedures
- ensures all food meets quality and presentation standards
- cooks soups, sauces and meats according to DERU standards
- resolves customer complaints passed up from staff or requests assistance from owner
- knows many regulars by name and understands their dining preferences
- orders and oversees inventory of everything except office supplies and liquor
- teaches staff classes including Welcome to the Roadhouse, Back of House Orientation, and Basic Food Safety
- completes training passport within stated timeframes and lives the Training Compact
- leads weekly DOR huddles with staff
- establishes and maintains good communication and positive working relationships with Managing Partner, Chef, Service Director, and front of house staff
- ensures certification in CPR and First Aid and maintains Serve Safe certification
