The community is currently seeking a Sous Chef to join their dynamic team. This role is integral to the culinary operations within the senior living community. The Sous Chef will provide essential supervision to the dietary and kitchen team while supporting the Executive Chef. A significant part of the role involves assisting in controlling food costs and maintaining the security and inventory of food items and supplies. This position requires a hands-on approach in managing meal production according to company policies and procedures, ensuring regulatory compliance, and overseeing proper portioning and plate presentation of all menu items. Maintaining rigorous Food Safety Equipment and Temperature Records is critical for operational success and safety standards. The Sous Chef is also responsible for the effective rotation of inventory using the FIFO (First In First Out) method to preserve food quality and safety. This position demands an individual with strong organizational and time management skills, capable of making sound judgments and decisions. Flexibility in working evenings, weekends, and varying hours is required to meet the demands of the operational schedule. Job Requirements
- High school diploma or equivalent
- Two (2) years' experience as a Sous Chef
- Supervisory experience preferred
- Current Food Services Sanitation certificate required
- Associates Degree in Culinary Arts preferred
- Strong organizational and time management skills
- Excellent judgment, problem solving and decision-making abilities
- Ability to work weekends, evenings and flexible hours
Job Qualifications
- To be successful in this position, we believe that you need the following experiences, strengths, and skills:
- Previous cook experience required
- Must hold a Managers Food Handlers permit
- This may be facilitated by Spectrum Retirement
- Must be self-motivated, organized, and professional
- Must be able to work independently and handle multiple tasks at one time
- Strong communication skills are critical
- You will need to be able to work with potential residents, current residents, family members, and team members
Job Duties
- The Sous Chef is responsible for the daily operations of the kitchen, providing professional leadership and direction to kitchen personnel
- Hires and trains Line Cooks and Dishwashers, under general direction of the Director of F&B
- Places food and supply orders
- Completes and documents safety audits and monthly in-service trainings
- Ensures correct plate presentation prior to dishes leaving the kitchen
- Oversees kitchen labor and food cost
- monitors budget
- Prepares high quality food
