Job Requirements

  • Culinary degree or related hospitality training required
  • minimum 2 years relevant experience in similar scope
  • ability to manage food and labor costs
  • capability to oversee kitchen cleanliness and organization
  • willingness to obtain Food Safety Manager Certification within 30 days if not already held
  • ability to work in a high-pressure kitchen environment
  • flexibility with scheduling including potential overtime
  • physical ability to move up to 10 lbs regularly and lift 50 lbs weekly
  • capacity to work standing for extended periods and adapt to changing priorities
  • experience leading kitchen staff and overseeing culinary operations

Job Qualifications

  • Culinary degree or related training in hospitality or restaurant industry
  • minimum 2 years relevant work experience in similar role
  • preferred experience in luxury brand or markets
  • preferred food safety manager certification or willingness to attain within 30 days
  • excellent written, verbal, and interpersonal communication skills

Job Duties

  • Maintain a file of recipes including ingredients, portions, and preparation directions
  • assist the Executive Chef in developing menus, recipe cards, and specifications according to Kessler SOPs
  • set standards and methods for portion control with value in mind
  • ensure all recipes are followed consistently
  • assume responsibility for kitchen in absence of Executive Chef
  • monitor inventory daily for proper levels and quality
  • manage food and labor costs within budget
  • arrange staff training on equipment use and cleaning
  • organize monthly kitchen meetings
  • participate in performance appraisals and discipline
  • assist in staff development and coaching
  • attend manager and mandatory meetings
  • maintain kitchen cleanliness and organization
  • complete daily kitchen walkthroughs
  • track food costs and complete monthly inventory
