The Sous Chef role at City Winery is a pivotal leadership position responsible for supporting and overseeing culinary operations to uphold the highest standards of food quality and presentation. This role requires a dynamic culinary professional who exemplifies creative leadership and operational excellence. The Sous Chef must ensure adherence to the company’s culinary style and food culture while maintaining rigorous compliance with health, safety, and sanitation regulations.

In this role, you will work closely with the Executive Chef to manage kitchen operations, coordinate multiple shifts, and supervise kitchen staff, ensuring smooth day-to-day functions. You will be expected to foster a culture of mutual trust and respect, mentoring and training team members to meet and exceed food preparation standards. The role involves significant responsibilities including directing culinary creation and development, budgeting and financial oversight, purchasing and inventory management, and collaboration across company divisions to achieve business goals.

A commitment to continuous improvement is essential as you develop and implement production methodologies aimed at enhancing efficiency, consistency, and quality in the kitchen. Your leadership will be critical in setting goals, solving operational challenges, and overseeing the execution of culinary projects and events. The position requires proficiency in managing food cost control, labor budgeting, and payroll processing to maintain profitable kitchen operations.

Job Requirements

  • Minimum 3 years experience in kitchen leadership
  • Culinary school graduate or related training is a plus
  • Knowledge of health and safety regulations including OSHA
  • Serve Safe certification
  • Proficiency in multitasking and managing high-pressure environments
  • Strong interpersonal and communication skills
  • Ability to manage budgets and control costs
  • Computer literacy
  • Physical ability to perform kitchen duties
  • Availability to work flexible schedules
  • Ability to travel to different locations for meetings and events

Job Qualifications

  • Minimum 3 years experience in a kitchen leadership role in a high volume environment
  • AOS Culinary School graduate or equivalent culinary training preferred
  • Functional knowledge of Health Department, OSHA, and related regulations
  • Demonstrated multitasking, decision-making, and problem-solving skills
  • Ability to manage budgets including labor, food, and operating costs
  • Strong training, development, and team-building capabilities
  • Excellent verbal and written communication skills
  • Proficient computer and technology skills
  • Serve Safe food handler's certificate
  • Ability to work flexible schedules including nights, weekends, and holidays
  • Physical capability to stand, walk, bend, and lift up to 50 lbs

Job Duties

  • Oversee all kitchen production areas alongside the executive chef
  • Coordinate, schedule, and supervise multiple kitchen shifts
  • Teach and uphold City Winery culinary philosophy and quality standards
  • Monitor production procedures to ensure consistency, efficiency, and professionalism
  • Supervise adherence to recipes, quality measures, purchasing, and inventory planning
  • Enforce company policies and training standards
  • Establish kitchen goals and resolve operational issues
  • Develop methodologies to improve kitchen productivity and quality
  • Maintain sanitation, cleanliness, and safety standards
  • Train kitchen staff in food preparation, cooking, and presentation
  • Foster a positive work environment and build team morale
  • Participate in hiring, training, and evaluating kitchen staff
  • Manage food costs, labor budgets, and kitchen expenses
  • Monitor and approve production scheduling and administrative duties
  • Partner with internal divisions to support culinary needs of special events
