This role is for a full-time, onsite Sous Chef position based in Saint Paul, Minnesota, within the Dining & Events segment of Lancer Hospitality. The Sous Chef will play an instrumental role in supporting various locations by supervising and participating in the preparation, seasoning, and cooking of a wide array of dishes such as salads, soups, fish, meats, vegetables, and desserts. The position offers a competitive compensation package with an annual salary of around $68,000.

As a Sous Chef with Lancer Hospitality, you will be tasked with mentoring and teaching team members, guiding them through the culinary process to ensure consistency and quality. You will contribute creatively by developing menus that meet consumer tastes and nutritional needs, while respecting budgetary constraints and established procedures. The role demands adherence to production, safety, and sanitation standards, guaranteeing the highest levels of cleanliness and food quality. You will conduct inspections of production areas and food appearance, overseeing the proper display of menu items for special functions and catering events. Job Requirements

  • Education in culinary arts or related field preferred
  • Three to five years of culinary management experience required
  • Strong leadership skills

Job Qualifications

  • Demonstrated institutional, hotel, or restaurant culinary skills including large quantity production
  • Three to five years of culinary management experience
  • Strong leadership, oral and written communication skills
  • Proven track record of successfully controlling costs and managing annual budgets
  • Bachelor’s degree in institutional management, nutrition, dietetics, or hotel and restaurant management preferred
  • Certification by a recognized culinary institution or an equivalent combination of education and experience considered

Job Duties

  • Develop menus in accordance with consumer tastes, nutritional needs, ease of preparation and established procedures and budgetary constraints
  • Participate in menu planning activities, including purchasing specifications, product and recipe testing
  • Maintain proper production, safety and sanitation standards
  • Direct and participate in daily preparation of standard and gourmet food items
  • Evaluate the quality of raw food and ensure the quality of finished products
  • Inspect assigned units to observe food preparation quality, food appearance, cleanliness and sanitation of production and service areas, equipment and employee appearance
  • Implement culinary production for special events, monotony breakers, and catered functions
  • Supervise and participate in preparation and display of menu items for special functions
  • Maintain proper inventory controls for food, supplies, and equipment
  • Interview, select, train and evaluate supervisory and support staff
  • Control revenue and expenses to ensure financial goals
  • Ensure the highest level of customer service
  • Perform other duties as assigned
