The role of the Sous Chef at Royce Brook Golf Club is a remarkable career opportunity for culinary professionals who thrive in a dynamic hospitality setting. This position involves direct supervision of culinary staff, ensuring food production meets the highest standards, managing schedules, training team members, and maintaining quality and food cost control. The Sous Chef plays an integral role in the kitchen by overseeing specific areas such as the restaurant line, banquets, or shifts, guaranteeing consistent production of high-quality food. This leadership position requires a detail-oriented individual who can implement sanitary programs, monitor kitchen equipment, assist in ordering food products, and manage food storage and rotation to comply with health regulations. In collaboration with the Executive Chef, the Sous Chef contributes to the development and evaluation of food concepts and helps meet the budgetary objectives of the Food and Beverage department.
The successful candidate will possess a combination of culinary skills, leadership qualities, and knowledge of food safety practices. Responsibilities include assigning duties, training associates, promoting communication between departments like Banquets and Restaurant, and addressing any operational challenges effectively. This is a full-time position with varied physical demands including frequent standing, walking, reaching, occasional lifting up to 100 pounds, and working in different environmental conditions such as wet, humid, or outdoor weather settings. Candidates should have completed culinary training or possess relevant experience, along with Food Safety and Sanitation Training certification. Job Requirements
- Certificate from college, technical school or accredited facility
- Three to six months related experience and/or training
- Equivalent combination of education and experience
- Food Safety and Sanitation Training certification
- Ability to read and speak English
- Knowledge of accepted sanitation standards and applicable health codes

Job Duties
- Oversees and manages food preparation for a specific area of the kitchen
- Supervises and ensures production of consistently high quality food
- Adheres to established control procedures for cost and quality such as food production charts, par inventories, standardized recipes, use records, food costing sheets
- Monitors and checks the maintenance of all kitchen equipment daily
- Maintains a quality sanitation program
- Maintains and implements daily food prep lists
- Assists Executive Chef with the ordering of all food products
- Assigns duties to associates for efficient operation of the kitchen
- Maintains and evaluates existing food concepts
- Assists in the development of new food concepts
- Assists in the achievement of budgetary objectives for the Food and Beverage department
- Process requisitions for supplies quickly and accurately
- Promotes effective communication among the operational departments that interact with the kitchen such as Banquets, Restaurant and Snack Bar
- Trains and supervises associates in the proper preparation of menu items and operation of equipment
- Ensures proper receiving, storage including temperature setting and rotations of food products so as to comply with health department regulations
- Assists the department manager in interviewing, training, planning and assigning work
- Make recommendations when hiring, evaluating performance, rewarding, and disciplining associates
- Addresses complaints and resolves problems
- Assists in the coordination of department members that may include, but is not limited to: Cooks and Stewards
- Regular and reliable attendance
- Performs other duties as required
