The role of Executive Sous Chef at Invited is a critical leadership position within its culinary operations. Reporting directly to the Executive Chef, the Executive Sous Chef is responsible for assisting in overseeing all aspects of kitchen management across main, grill, and banquet kitchens. This includes crucial tasks such as ordering, staff scheduling, sanitation standards, maintenance oversight, employee development, and conducting performance reviews. The position demands a hands-on approach to ensuring the quality and consistency of food preparation and presentation, adherence to budgetary constraints for product quality, profit margins, labor costs, and operational efficiencies.

Beyond daily kitchen management, the Executive Sous Chef is central to organizing and managing service activities that include a la carte dining, employee meals, and private dining rooms, ensuring all offerings align with the company’s high-quality standards and member expectations. The role entails active supervision and performance management of kitchen staff, fostering a culture of skill enhancement and teamwork while upholding the established 3 Steps of Service to maximize guest satisfaction. Additionally, menu development for a la carte and banquet services falls under the purview of the Executive Sous Chef, as does managing the expediting process of meals to maintain optimal food quality, portion control, and presentation aesthetics.

Job Duties

  • Responsible for proper preparation, excellence of product, profit, and labor cost
  • Organize and help in the service of all activities concerning a la carte, employee meals and private dining rooms
  • Ensure consistent preparation and presentation based on overall standards, including portion size, of daily specials, salads, entrees, etc.
  • Train, supervise, direct and performance manage employees
  • Enhance overall knowledge and team spirit of kitchen staff
  • Prepare work schedules for kitchen crew and monitor payroll costs and Kronos reports
  • Develop menus for a la carte and banquet services
  • Expedite meal periods ensuring quality, portioning, and presentation
  • Interact professionally with members and guests, accommodating last-minute requests
