The Role
The Sous Chef at Methodology is a pivotal position that involves managing daily culinary production with precision and leadership. This role ensures that production processes meet rigorous standards in quality, throughput, productivity, and food cost, while maintaining hands-on involvement in cooking, team leadership, and system development. The Sous Chef acts as the operational cornerstone of the kitchen, overseeing the use of advanced high-volume kitchen equipment such as Rational combi-ovens and tilt skillets to deliver consistent, high-quality meals. The role requires working primarily Monday through Friday with occasional weekend production as needed.
The ideal candidate will partner closely with Executive Chef Michael Phan, a visionary chef with a two-decade career including leadership at The Slanted Door, co-Founder and CEO Julie Nguyen, who directs product innovation and precision nutrition, and COO Stephen Liu, who brings expertise from fine dining and operational leadership. Together, they drive the mission to deliver meals that transform health and performance, building a kitchen and a culinary program that consistently exceeds expectations. Job Requirements
- Bachelor’s degree preferred but not required
- Minimum 3 years experience in high-volume culinary production or equivalent
- Experience managing a culinary team in a fast-paced environment
- Familiarity with clinical nutrition standards and sanitation protocols
- Strong organizational and time management skills
- Ability to communicate effectively with kitchen staff and leadership
- Capacity to work flexible hours including some weekends
- On-site presence required in Concord, CA
Job Qualifications
- 3+ years as CDC, Sous Chef, or higher in a high-volume batch cooking environment
- Strong proficiency with large-batch production equipment such as combi-ovens and tilt-skillets
- Proven experience with gluten-free, paleo, vegan/vegetarian, and specialty diet recipe development at volume
- Experience with food purchasing, inventory management, and production scheduling
- Proficient in Google Suite (Docs and Sheets) and familiar with payroll and timekeeping systems
- Strong floor leadership with clear communication and accountability
- Working understanding of food cost including yields, waste, and impact on P&L
- On-site availability in Concord, CA
Job Duties
- Run daily production from prep through portioning, packaging, and handoff to fulfillment
- Manage the cook team with clear expectations, real-time coaching, and direct accountability
- Enforce portioning protocols to the gram, ensuring nutritional data matches container contents
- Manage scheduling, timekeeping, and support recruiting for the culinary team
- Maintain food safety, sanitation, and cleanliness to the highest clinical standard
- Attend the weekly R&D call, contributing to dish development and reformulation
- Own production buildout for approved dishes including yield testing, batch sizing, portioning documentation, plating standards, and team training
