The full-time Sous Chef position at Albertus Magnus College is a key role within the campus dining operations. This position supports the Executive Chef in preparing and cooking meals, ensuring compliance with established recipes and production standards. The Sous Chef will coordinate activities among cooks and other food service associates and assume responsibility for the kitchen in the Executive Chef's absence. The role requires supervision of hourly food service staff, including hiring, training, scheduling, payroll, and performance management, ensuring that food safety and sanitation standards are rigorously maintained. This position works Monday through Friday with some weekend availability, offering a pay range of $25.00 to $30.00 per hour.
In this role, the Sous Chef plays a critical part in delivering high-quality culinary experiences that meet the college's standards and customers' expectations. The candidate will be expected to handle food storage, presentation, portion control, and temperature maintenance, while maintaining stringent sanitation and cleanliness of kitchen equipment and workstations. They will interact with customers to address complaints in a courteous and professional manner and keep abreast of production demands during peak service hours. Inventory management, including tracking product use, waste, and coordinating deliveries, is also a vital responsibility.

- ServSafe certification
- 3-5 years of cooking experience
- Ability to follow and execute provided recipes

Job Duties
- Cooks and prepares food following approved recipes and production standards
- Ensures all deadlines are met based on production orders
- Supervises hourly food service associates including interviewing, scheduling, payroll, training, counseling, and recommending disciplinary action
- Stores food in designated areas following all corporate, state and federal food safety and sanitation procedures
- Ensures proper food handling, presentation, portion control and maintenance of appropriate serving temperatures
- Maintains sanitation of equipment, supplies and utensils
- Interacts with customers to resolve complaints in a friendly, service-oriented manner
- Demonstrates complete understanding of daily menu items and accurately explains them to associates and customers
- Monitors inventory and deliveries of product and supplies
- Tracks product production, consumption and waste
- Performs other duties as assigned
