This role of Sous Chef at Margaritaville on CityWalk places you in a dynamic, high-volume branded restaurant environment focused on delivering exceptional food and service. The Sous Chef will act as the primary support for the kitchen team, driving operational excellence and productivity while ensuring food quality standards are consistently met or exceeded. Reporting directly to the Restaurant Chef, the Sous Chef sets clear expectations for kitchen staff and leads by example in a fast-paced setting requiring strong leadership and the ability to motivate the team effectively. Responsibilities include managing food, beverage, and labor costs to optimize profitability, training and retaining talented staff, and maintaining compliance with all food safety and labor regulations. This position demands strong organizational skills to oversee inventory, scheduling, maintenance, and daily kitchen operations. The Sous Chef is a hands-on role, emphasizing mentorship, communication, and high-quality guest experiences within a collaborative team environment.

Candidates will be expected to have significant management experience within high-quality restaurant operations and be comfortable working rotating schedules including nights, weekends, and holidays. Expertise in financial controls, menu support, and guest relations is essential, as well as proficiency in key software and point-of-sale systems. Job Requirements

  • Bachelor's degree in business, hospitality management or a related field or equivalent combination of education and experience
  • Minimum of 5 years of management experience in high quality chain or independent restaurant group
  • Thorough knowledge of MS Excel, Word, PowerPoint and POS systems
  • Ability to work rotating schedules, holidays, weekends and nights
  • This position is required to be performed full-time from an NBCUniversal-designated worksite

Job Duties

  • Drive operating profit goals and sales
  • Optimize profits by controlling food, beverage, and labor costs

  • Ensure compliance with all local, state, and federal laws regarding food quality, safety, labor, and employment
  • Partner with Human Resources to train and develop restaurant leaders at every level
  • Maintain or exceed weekly budgeted variable operation profit by controlling cost of goods and variable labor
  • Communicate restaurant results to the Restaurant Chef and General Manager with recommendations for improvement
  • Ensure high Team Member and Guest Engagement
  • Mentor and counsel team members and enforce appropriate policies and procedures ensuring everything is within compliance of venue and company standards
  • Promote company’s mission and values
  • Ensure company policy and brand standards are followed
  • Prepare and present hourly team member reviews
  • Complete all tasks assigned by the Executive Sous Chef on time
  • Order supplies, food and ingredients based on rapidly shifting demand
  • Hire and train kitchen staff in specific stations and cross-train as necessary
  • Create schedules for kitchen staff to ensure there are always enough workers to meet the demand
  • Maintain inventory levels and conduct full inventories
  • Schedule and oversee necessary maintenance and repairs on kitchen appliances
  • Assist the management team with menu changes and adjustments
  • Respond personally to guest questions, special recipe requests and complaints
  • Maintain a clean workspace at all times
  • Work at a fast and efficient pace as a working chef
  • Ability to read and follow recipes and follow up with prep and line cooks food preparation
  • Have thorough knowledge of food cost, labor cost, and inventory functions
  • Chemical safety comprehension
  • Analyze financial reports to quickly identify and address trends and issues in area performance including cost of goods, variable labor, and profitability
  • Exceed annual operating profit targets
