Job Description

Tre Dita is a highly anticipated new dining establishment set to open in fall 2023 inside the prestigious St Regis Chicago. This restaurant will be led by the acclaimed Chef Evan Funke, known for his success with Felix Trattoria, Mother Wolf, and Funke. Tre Dita will focus on delivering an authentic Italian culinary experience highlighted by its unique "pasta lab," where fresh, handmade pasta is crafted daily. The menu will also feature classic Italian steaks, including the renowned bistecca Fiorentina, making it a must-visit destination for lovers of Italian cuisine and fine dining.

The role available at Tre Dita is for a Sous Chef, a critical team member responsible for the kitchen's operations and culinary excellence. This full-time position comes with a competitive salary range from $55,000 to $75,000 per year, coupled with numerous benefits and chances for professional growth. The ideal candidate will have at least two years of sous chef experience in a full-service restaurant and possess strong leadership skills necessary to manage and inspire kitchen staff. They will work closely with the General Manager and other senior managers to ensure smooth BOH (back of house) operations, maintain high food quality standards, control food costs, and enhance team performance.

As Sous Chef at Tre Dita, responsibilities include overseeing BOH shifts, conducting pre-shift meetings, managing inventory and food orders, performing line checks, and supporting new employee onboarding and training. Communication skills are paramount, as the Sous Chef must coordinate effectively with front of house staff and respond with professionalism to guests, vendors, and team members. This role requires flexibility in work hours with the possibility of early mornings, late nights, weekends, and occasional travel.

Job Requirements

  • At least 2 years of sous chef experience

Job Qualifications

Job Duties

  • Run BOH shifts and ensure effective and efficient BOH shifts and operations including food prep and cooking, ensure adequate inventory levels of food and supplies, and supervise the kitchen, dish and all other BOH teams
  • Lead BOH pre-shift meetings and participating in line, temp and cooler checks and food tastings for the shift
  • Partner with GM and/or designated managers/chefs to regularly review and maintain recipe books
  • Perform regular line checks throughout the day to ensure quality of all menu items
  • Purchase and order food product and supplies for the restaurant including daily product order
  • Assist with tracking and controlling food cost
  • Ensure effective communication of food production and timing issues, needs, and special requests between front of house (FOH) and BOH
  • Partner with GM and management team to interview, hire, onboard, train, supervise and develop all BOH employees and teams as needed
  • Model and promote teamwork across all teams
  • Use tact and good judgment when dealing with challenges pertaining to guests, vendors and employees, and respond with patience and courtesy
  • Work a variety of days and shifts (including early mornings, late nights and weekends) at multiple sites with or without overnight travel, as needed
  • Move and lift up to 10 pounds, frequently move and/or lift up to 25 pounds, occasionally move and/or lift up to 50 pounds
